- 8 oz cream cheese softened
- 1 cup sour cream
- 1 cup freshly shredded Parmesan
- 1 cup freshly shredded mozzarella
- 1 cup freshly shredded Gouda
- 2 cups shredded cooked chicken
- 6 cloves garlic minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- ½ tsp black pepper
- ¼ tsp salt
- ⅓ cup sun-dried tomatoes drained and chopped
- ½ cup roasted red peppers chopped
- 6 oz spinach chopped
- Extra cheese for topping optional
- Parsley + paprika for garnish (optional)
Preheat the oven to 375°F. Lightly grease a baking dish or cast-iron skillet.
In a large bowl, blend the cream cheese and sour cream, together with the garlic and seasonings until smooth.
Fold in the remaining ingredients—all cheeses, chicken, seasonings, garlic, spinach, sun-dried tomatoes, and roasted red peppers.
Spread the mixture evenly into your baking dish and sprinkle extra cheese on top if you want.
Bake for 25-30 minutes or until hot and bubbly.
For a more golden top, broil for 1–2 minutes at the end.
Garnish with parsley and a pinch of paprika. Serve immediately with crackers or baguette slices.
