Tapioca Pudding (Lactose Free)
Creamy tapioca pudding, high in protein, and calcium, and lactose-free!
- 3/4 cup Minute Tapioca
- 1 1/4 cups sugar divided
- 3/8 tsp salt
- 6 cups fairlife
- 3 eggs divided into yolk and whites
- 2 tsp vanilla
Mix together 3/4 cup Tapioca, 3/4 cup sugar, 3/8 tsp salt, 6 cups fairlife, and 3 egg yolks and pour into a sauce pan. Let it sit in a pan for about 5 minutes
In the meantime, beat 3 egg whites and gradually add 1/2 cup sugar, and beat until stiff.
Turn pan on to a medium-high heat, and bring to a full boil, stirring constantly.
Boil for 1 minutes.
Remove from heat, and carefully fold in the beaten egg whites.
Add 2 tsp vanilla.
Scoop into your serving dishes, so it can thicken in them.
Serve hot, or chill and serve cold. You can eat it with vanilla ice cream, whipped cream, fresh or frozen fruit.
