- 2 pounds potatoes cut into 1-inch chunks
- 1 onion diced
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 3/4 teaspoon ground black pepper
- 1 Tablespoon minced garlic
- 1/2 teaspoon paprika
- 2 pounds chicken boneless skinless chicken breasts, diced into 1 ½-inch pieces
- 2 cups shredded mozzarella cheese
- 1/4 cup Parmesan cheese grated, optional
- 1 tablespoon fresh parsley chopped, to taste (optional)
Sauce:
- 1/2 cup Butter melted
- 1/2 cup Parmesan grated
- 1 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
- 1/4 teaspoon Black pepper
- 1 cup Chicken stock
In a slow cooker crock, combine potatoes, onions, olive oil, minced garlic, 3/4 teaspoons salt, 1/2 teaspoon black pepper, and paprika, and stir until well coated.
Add chicken pieces on top and season with remaining salt and pepper.
Whisk sauce ingredients together in a bowl and pour mixture over chicken and potatoes.
Cook on High for 4.5 hours (or on Low for 6 hours), or until chicken is cooked through and potatoes are tender. DO NOT OVERCOOK
With about 20 minutes of cooking time left, sprinkle with mozzarella and Parmesan and continue to cook, covered.
