Ingredients

  • 2 pounds potatoes cut into 1-inch chunks
  • 1 onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon paprika
  • 2 pounds chicken boneless skinless chicken breasts, diced into 1 ½-inch pieces
  • 2 cups shredded mozzarella cheese
  • 1/4 cup Parmesan cheese grated, optional
  • 1 tablespoon fresh parsley chopped, to taste (optional)

Sauce:

  • 1/2 cup Butter melted
  • 1/2 cup Parmesan grated
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/4 teaspoon Black pepper
  • 1 cup Chicken stock

Instructions

  • In a slow cooker crock, combine potatoes, onions, olive oil, minced garlic, 3/4 teaspoons salt, 1/2 teaspoon black pepper, and paprika, and stir until well coated.
  • Add chicken pieces on top and season with remaining salt and pepper.
  • Whisk sauce ingredients together in a bowl and pour mixture over chicken and potatoes.
  • Cook on High for 4.5 hours (or on Low for 6 hours), or until chicken is cooked through and potatoes are tender. DO NOT OVERCOOK
  • With about 20 minutes of cooking time left, sprinkle with mozzarella and Parmesan and continue to cook, covered.
