Cheesey Skillet Potatoes

Ingredients

  • 4 cups peeled and diced potatoes
  • 1 Tbs Vegetable Oil

Cheese sauce

  • 4 ounces cream cheese
  • 2 cups cheese blend
  • 1/2 cup parmesan
  • 2 Tbs milk or heavy cream
  • Salt and pepper

Instructions

  • Put vegetable oil in bottom of your skillet and heat
  • Add in potatoes and a little salt and pepper, cook until potatoes start to crisp up and brown, but are not cooked through.
  • Remove from heat
  • Mix together all the cheese sauce ingredients until nice and smooth
  • Pour over top of potatoes
  • Bake in skillet at 300 for 40 minutes
