Cheesey Skillet Potatoes

- 4 cups peeled and diced potatoes
- 1 Tbs Vegetable Oil
Cheese sauce
- 4 ounces cream cheese
- 2 cups cheese blend
- 1/2 cup parmesan
- 2 Tbs milk or heavy cream
- Salt and pepper
Put vegetable oil in bottom of your skillet and heat
Add in potatoes and a little salt and pepper, cook until potatoes start to crisp up and brown, but are not cooked through.
Remove from heat
Mix together all the cheese sauce ingredients until nice and smooth
Pour over top of potatoes
Bake in skillet at 300 for 40 minutes
