  • 1/2 cup baking soda

Instructions

  • In a mixer with dough hook, combine warm water, white sugar, salt, and yeast.
  • Stir everything together, then let it sit for 5 minutes to proof yeast. Be sure the yeast is active and foams a bit.
  • When the 5 minutes it up, slowly add in flour and melted butter and garlic salt (or spice of choice) while mixer is going.
  • When dough starts to pull away from the sides, you have enough flour
  • Let knead for 5-7 minutes. Don't skip, set a timer.
  • When the 5 minutes is up check the dough, it should be all in one ball and sides should be clean, if not there yet let knead for a few more minutes.
  • Remove dough from mixing bowl, coat with olive oil, and return, let rise until double. (Approximately 1 hr in a warm kitchen)
  • Preheat oven to 450 degrees F
  • In a large pot bring 9 cups of water and 1/2 cup baking soda to a boil
  • While waiting for it to boil, separate dough into 12 equal pieces, and roll into ropes about a foot long. Then cut into 12 inch long pieces.
  • Once boiling, drop pretzel bite pieces, into boiling water for 30 seconds.
  • Remove and place on a parchment lined baking sheet
  • Mix up egg wash by whisking together 1 large egg and water, brush over the top of the bites, and sprinkle large crystal salt over the top.
  • Bake at 450 for 11-12 minutes
  • Remove from baking tray to cooling rack, while cooling, mix together sugar and cinnamon, and melt butter
  • Dip pretzels in melted butter (or brush it over the top), and enjoy!
