In a mixer with dough hook, combine warm water, white sugar, salt, and yeast.
Stir everything together, then let it sit for 5 minutes to proof yeast. Be sure the yeast is active and foams a bit.
When the 5 minutes it up, slowly add in flour and melted butter and garlic salt (or spice of choice) while mixer is going.
When dough starts to pull away from the sides, you have enough flour
Let knead for 5-7 minutes. Don't skip, set a timer.
When the 5 minutes is up check the dough, it should be all in one ball and sides should be clean, if not there yet let knead for a few more minutes.
Remove dough from mixing bowl, coat with olive oil, and return, let rise until double. (Approximately 1 hr in a warm kitchen)
Preheat oven to 450 degrees F
In a large pot bring 9 cups of water and 1/2 cup baking soda to a boil
While waiting for it to boil, separate dough into 12 equal pieces, and roll into ropes about a foot long. Then cut into 12 inch long pieces.
Once boiling, drop pretzel bite pieces, into boiling water for 30 seconds.
Remove and place on a parchment lined baking sheet
Mix up egg wash by whisking together 1 large egg and water, brush over the top of the bites, and sprinkle large crystal salt over the top.
Bake at 450 for 11-12 minutes
Remove from baking tray to cooling rack, while cooling, mix together sugar and cinnamon, and melt butter
Dip pretzels in melted butter (or brush it over the top), and enjoy!
