- 1 1/2 lbs chicken breast cut into 1 inch cubes
- Skewers
Marinade
- 1 cup olive oil
- 1/4 tsp cayenne pepper
- ½ cup lemon juice
- 5-6 cloves of garlic
- ¼ cup fresh mint leaves
- 2 Tbs dried oregano
- 2 Tbs fresh rosemary
- salt and pepper
- 1/2 cup greek yogurt
- 1 Tbs red wine vinegar
Tzatziki
- 1 cup plain Greek yogurt
- 2 garlic cloves peeled and minced
- 3/4 cup peeled, seeded, finely diced cucumber
- 1/2 Tbs fresh dill chopped fine
- 1 tsp mint chopped fine (optional)
- 1 Tbs fresh lemon juice
- salt and pepper to taste
Put chunked chicken into a gallon sized ziplock bag.
Place all marinade ingredients in a food processor, and process
Pour marinade over chicken. Marinade for at least an hour.
Pull out of fridge 15 minutes before you are ready to grill.
If baking, preheat oven to 400 degrees.
Put chicken on skewers.
Oil the grates of the grill, then grill until internal temperature reaches 160 degrees F. This takes approximately 15 minutes. Or bake for 15-20 minutes.
Meanwhile, prepare tzatiziki, by mixing all ingredients in a bowl.
Serve chicken with tzatziki dipping sauce.
