Ingredients

  • 1 1/2 lbs chicken breast cut into 1 inch cubes
  • Skewers

Marinade

  • 1 cup olive oil
  • 1/4 tsp cayenne pepper
  • ½ cup lemon juice
  • 5-6 cloves of garlic
  • ¼ cup fresh mint leaves
  • 2 Tbs dried oregano
  • 2 Tbs fresh rosemary
  • salt and pepper
  • 1/2 cup greek yogurt
  • 1 Tbs red wine vinegar

Tzatziki

  • 1 cup plain Greek yogurt
  • 2 garlic cloves peeled and minced
  • 3/4 cup peeled, seeded, finely diced cucumber
  • 1/2 Tbs fresh dill chopped fine
  • 1 tsp mint chopped fine (optional)
  • 1 Tbs fresh lemon juice
  • salt and pepper to taste

Instructions

  • Put chunked chicken into a gallon sized ziplock bag.
  • Place all marinade ingredients in a food processor, and process
  • Pour marinade over chicken. Marinade for at least an hour.
  • Pull out of fridge 15 minutes before you are ready to grill.
  • If baking, preheat oven to 400 degrees.
  • Put chicken on skewers.
  • Oil the grates of the grill, then grill until internal temperature reaches 160 degrees F. This takes approximately 15 minutes. Or bake for 15-20 minutes.
  • Meanwhile, prepare tzatiziki, by mixing all ingredients in a bowl.
  • Serve chicken with tzatziki dipping sauce.
