- 4 salmon filets
- 1 lemon plus extra slices for serving
- 2 Granny Smith apples
- 1 inch piece fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon minced garlic
Juice the marinade: Using a juicer, juice 2 apples, 1 lemon, and a 1-inch piece of fresh ginger. If you do not have a juicer, simply combine 1 cup apple juice, juice of 1 lemon, and 1 Tbs ginger paste.
Marinate: Place the salmon in a zip-top bag or shallow dish. Pour the juice mixture over it along with soy sauce and minced garlic. Marinate for at least 30 minutes, up to 2 hours, to let those fresh flavors soak in.
Bake: Preheat your oven to 400°F. Transfer the salmon to a baking dish and bake for 12–15 minutes, until the fish is opaque and flakes easily with a fork. The internal temperature should reach 130–135°F.
Serve: Top with fresh lemon slices and enjoy immediately for a bright, fresh, and delicious meal.
