Chicken Stuffing Casserole

This easy Chicken Stuffing Casserole is the ultimate comfort food — tender chicken, creamy sauce, and savory stuffing baked together in one cozy dish.

Ingredients

  • 2 pounds chicken breasts trimmed and cut into bite sized pieces
  • 21 ounces cream of chicken soup 2 cans
  • ¼ cup milk
  • 6 ounce box Stove Top chicken stuffing mix
  • 1 ½ cups chicken broth

Seasoning:

  • fresh or dried parsley for garnish
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 375°F.
  • Spray an 2 quart baking dish with cooking spray, and set aside.
  • Cut chicken into bite-sized pieces and place them into the baking dish.
  • Season with salt and pepper
  • In the casserole dish, whisk together 2 cans cream of chicken soup and 1/4 cup milk until smooth.
  • Add the chicken pieces to the casserole dish, and season the chicken, then stir the chicken into the soup mix, until all of the chicken is covered.
  • Sprinkle the Stove Top chicken stuffing mix on top.
  • Pour 1 1/2 cups chicken broth over the stuffing mix, and press it a little to make sure that all of the stuffing is moistened by the broth.
  • Cover with foil and bake for about 40-45 minutes, until chicken reaches an internal temperature of 165 degrees F.
  • Take the foil off and bake for an additional 5 minutes to brown up the stuffing mix.
  • Garnish with fresh or dried parsley (optional) and serve.
