Preheat the oven to 375°F.
Spray an 2 quart baking dish with cooking spray, and set aside.
Cut chicken into bite-sized pieces and place them into the baking dish.
Season with salt and pepper
In the casserole dish, whisk together 2 cans cream of chicken soup and 1/4 cup milk until smooth.
Add the chicken pieces to the casserole dish, and season the chicken, then stir the chicken into the soup mix, until all of the chicken is covered.
Sprinkle the Stove Top chicken stuffing mix on top.
Pour 1 1/2 cups chicken broth over the stuffing mix, and press it a little to make sure that all of the stuffing is moistened by the broth.
Cover with foil and bake for about 40-45 minutes, until chicken reaches an internal temperature of 165 degrees F.
Take the foil off and bake for an additional 5 minutes to brown up the stuffing mix.
Garnish with fresh or dried parsley (optional) and serve.
