Chipotle Roasted Sweet Potatoes

- 1 sweet potato Large, peeled and cut into 1 cm cubes, about 2 cups
- 1 tablespoon olive oil
- 1 teaspoon chipotle chili powder
- 1 teaspoon Trader Joe’s Chili Lime seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
Preheat the Oven: Set your oven to 425°F (220°C).
Prepare the Sweet Potatoes: Peel and cut the sweet potato into 1 cm cubes.
Season: In a large mixing bowl, toss the sweet potatoes with olive oil, chipotle chili powder, Chili Lime seasoning, salt, and black pepper until evenly coated.
Arrange on a Baking Sheet: Spread the sweet potatoes out in a single layer on a parchment-lined baking sheet to ensure even roasting.
