Ingredients

  • 1 sweet potato Large, peeled and cut into 1 cm cubes, about 2 cups
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon Trader Joe’s Chili Lime seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the Oven: Set your oven to 425°F (220°C).
  • Prepare the Sweet Potatoes: Peel and cut the sweet potato into 1 cm cubes.
  • Season: In a large mixing bowl, toss the sweet potatoes with olive oil, chipotle chili powder, Chili Lime seasoning, salt, and black pepper until evenly coated.
  • Arrange on a Baking Sheet: Spread the sweet potatoes out in a single layer on a parchment-lined baking sheet to ensure even roasting.
  • Roast: Bake for 15 minutes, stirring halfway through to ensure all sides get crispy and caramelized.
  • Serve & Enjoy: Remove from the oven and let cool slightly before serving.
