Ingredients

  • 2 lbs chicken wings drumettes and flats
  • 1 teaspoon baking powder
  • 2 Tbsp olive oil
  • 1 1/2 Tbsps Cajun seasoning
  • 1/2 tsp salt

Cajun Sauce

  • 2 Tbsps butter melted
  • 1 1/2 Tbsp Cajun Seasoning
  • 1 Tbs fresh parsley or green onion for garnish

Instructions

Prep the Wings

  • Preheat your oven to 425°F (220°C).
  • Pat the wings dry with paper towels. This step is crucial for achieving crispy skin.

Season the Wings

  • In a large bowl, toss the wings with baking powder, salt, and 1 1/2 Tbs Cajun seasoning until evenly coated.
  • Drizzle with olive oil and mix again.

Arrange and Bake

  • Line a baking sheet with foil and place a wire rack on top. This setup allows air to circulate around the wings.
  • Arrange the wings in a single layer on the rack, ensuring they aren’t touching.
  • Bake for 40-50 minutes, flipping halfway through, until the wings are golden brown and crispy.

Serve and Enjoy

  • Remove from the oven and place in a bowl, toss with remaining cajun seasoning and 2 Tbs melted butter, let rest for a couple of minutes. Or pop back into heated oven to finish crisping up the skin.
  • Garnish with parsley or green onions if desired, and serve hot.
