Crispy Garlic Parmesan Wings

Crispy oven baked garlic parmesan wings, these delicious wings are perfect for game day, seasoned with spices, baked to crispy perfection, and tossed in an herby, garlic butter sauce then topped with plenty of parmesan!

Ingredients

  • 2 pounds chicken wings drums and flats
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons baking powder optional, when air frying, skip the baking powder

Spice Mixture

  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon smoked paprika

Wing Sauce

  • 1/4 cup butter melted
  • 5 cloves garlic minced
  • 2 Tablespoons parsley chopped
  • 1 Tablespoon chives chopped
  • 1/4 cup parmesan cheese freshly grated
  • zest of 1 lemon

Instructions

Step 1: Prep the Wings

  • Dry the wings thoroughly using paper towels. Make sure wings are fully defrosted, then pat them dry with paper towels. Removing excess moisture helps ensure crispy skin.
  • Mix together spice mixture. Set aside.
  • Season wings. In a large bowl, toss the wings with baking powder, once coated toss with spice mixture and coat evenly. The baking powder helps create that perfect crispy texture, and the spices flavor the chicken.

Step 2: Cook the Wings

    Oven Method:

    • Preheat your oven to 400°F (200°C) and place a wire rack on top of a baking sheet.
    • Arrange the wings on the wire rack, ensuring they aren’t touching, and there is space between them so they can crisp up and not steam. It is better to divide into batches if needed, then cook them too close together.
    • Bake for 20 minutes, then flip the wings and bake for another 20-25 minutes, or until golden brown and crispy.

    Air Fryer Method:

    • Preheat your air fryer to 400°F (200°C).
    • Place the wings in a single layer in the air fryer basket, with room between wings.
    • Cook for 20 minutes, flipping halfway through, until crispy and cooked through.

    Step 3: Make the Sauce

    • While the wings cook, melt the butter in a small saucepan over medium heat.
    • Add the minced garlic, chives, and parsley and sauté for 1-2 minutes until fragrant.
    • Remove from heat and stir in the Parmesan cheese and lemon zest. Add salt and pepper to taste.

    Step 4: Toss and Serve

    • Once the wings are cooked, transfer them to a large bowl.
    • Pour the garlic Parmesan sauce over the wings and toss to coat evenly.
    • Return to baking sheet and bake an additional 5 minutes if desired, to crisp up exterior further.
    • Remove from oven and garnish with additional fresh parsley and parmesan, if desired, and serve immediately.

    Notes

    Storing Leftovers: If you by chance have leftover wings, transfer leftover into an airtight container or ziptop bag, and refrigerate for up to 3 days.
    Freezing Leftovers: Place leftovers in a shallow container or ziptop bag, remove as much air as possible, and freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.
    Reheating Instructions: You can reheat chicken wings in the oven or the air fryer. Do not microwave them as they will lose their crispiness and get a rubbery skin. To maintain crispiness, reheat the wings in the oven at 375°F (190°C) or in the air fryer at 350°F (175°C) for 5-7 minutes.
