Ingredients

  • 2 pounds chicken thighs skinless, boneless, whole or cut into bite-size pieces
  • 2 sweet potatoes peeled if desired and diced
  • 1 yellow onion chopped
  • 1/4 cup pickled jalapeño slices
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon chili powder chipotle, or cayenne pepper, adjust to taste
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • 2 tablespoons honey or hot honey
  • Optional for serving: sliced avocado and cilantro

Instructions

  • Preheat oven
Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
  • Season the chicken and vegetables
Add chicken thighs, sweet potatoes, and yellow onion to the sheet pan. Drizzle with olive oil and sprinkle with garlic powder, paprika, chili or cayenne, salt, and pepper.
  • Roast
Toss everything together until evenly coated, then spread into a single layer. Roast for 20 minutes, stirring halfway through.
  • Add toppings and broil
Remove the pan from the oven. Sprinkle with sliced jalapeño and feta, then drizzle with honey or hot honey. Broil for 2–4 minutes, just until lightly charred and caramelized.
  • Serve
Remove from oven and top with sliced avocado if desired. Serve warm.
