  • 4-6 boneless, skinless chicken thighs
  • 2–3 sweet potatoes, peeled if desired and cubed
  • ½ onion, chunked
  • Olive oil
  • Garlic powder
  • Paprika
  • Chili powder, chipotle, or cayenne pepper (use to taste)
  • Salt and black pepper
  • Feta cheese, crumbled
  • Honey or hot honey
  • Optional for serving: sliced avocado, pickled jalapeno, cilantro

How to Make Hot Honey Chicken and Sweet Potatoes

  1. Preheat the oven
    Preheat your oven to 425°F and lightly grease a large sheet pan or line it with parchment paper.
  2. Prep and season
    Trim the chicken, and chop sweet potatoes, and onion into bite-size pieces. Add them to the sheet pan and drizzle with olive oil. Season generously with garlic powder, paprika, chili or cayenne, salt, and pepper.
  3. Roast
    Toss everything to evenly coat, then spread into an even layer. Roast for 20 minutes, tossing halfway through to ensure even cooking.
  4. Add the finishing touches
    Remove the pan from the oven and sprinkle with sliced jalapeño (optional) and crumbled feta. Drizzle generously with honey or hot honey.
  5. Broil to char
    Switch the oven to broil and cook for 2–4 minutes, just until the feta softens and everything gets slightly charred and caramelized.
  6. Serve and enjoy
    Finish with sliced avocado and fresh cilantro if desired, and serve warm.

Ingredients

  • 2 pounds chicken thighs skinless, boneless, whole or cut into bite-size pieces
  • 2 sweet potatoes peeled if desired and diced
  • 1 yellow onion chopped
  • 1/4 cup pickled jalapeño slices
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon chili powder chipotle, or cayenne pepper, adjust to taste
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • 2 tablespoons honey or hot honey
  • Optional for serving: sliced avocado and cilantro

Instructions

  • Preheat oven
Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
  • Season the chicken and vegetables
Add chicken thighs, sweet potatoes, and yellow onion to the sheet pan. Drizzle with olive oil and sprinkle with garlic powder, paprika, chili or cayenne, salt, and pepper.
  • Roast
Toss everything together until evenly coated, then spread into a single layer. Roast for 20 minutes, stirring halfway through.
