Jack O Lantern Stuffed Pepeprs

Ingredients

  • 6 orange bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice white or brown
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley or cilantro for garnish optional

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Peppers:
  • Cut the tops off the bell peppers and set them aside. Remove the seeds and membranes from inside the peppers.
  • Using a small paring knife, carve Jack O' Lantern faces into one side of each pepper. Be creative with the designs!
  • Cook the Filling:
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Stir in the cooked rice, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for a few minutes until everything is well combined and heated through.
  • Stuff the Peppers:
  • Place the prepared bell peppers in a baking dish.
  • Fill each pepper with the meat and rice mixture, packing it in tightly.
  • Sprinkle the shredded cheese on top of each stuffed pepper.
  • Bake:
  • Place the tops back on the peppers as lids.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  • Serve:
  • Remove the peppers from the oven and let them cool slightly before serving.
  • Garnish with fresh parsley or cilantro if desired.
