Ingredients
1shallotdiced fine
2Tablespoonsbutter
2cupslong-grain white rice
4cupsvegetable or chicken broth
1Lemonzest and juice + fresh lemon slices for serving
2Tablespoonsfresh dillfinely chopped
Salt and pepper to taste
Instructions
Build Flavor:
Start by melting butter in a large skillet over medium-high heat.
Add your minced shallots to the butter and cook until they’re translucent.(about 3-5 minutes)
Add the Rice:
Add the rice to the skillet, and coat with the shallots, butter, and more.
Cook 2-3 minutes, stirring often. Toasting the rice will remove excess moisture, and result in fluffier rice.
Add Extras:
Add the broth, lemon zest, salt, and pepper and stir to combine. (Note)
Simmer and Sit:
Bring to a simmer, cover, reduce the heat to low and cook for 20 minutes.
After 20 minutes, remove from the heat but leave the lid on.
Let sit for an additional 10 minutes.
Incorporate Fresh Dill and Lemon Juice:
Fold in the freshly chopped dill and the juice from 1 lemon, and season to taste with extra salt and pepper, if needed.
Fluff the Rice:
Fluff the rice up with a fork.
Serve and Enjoy:
Serve the Lemon Dill Rice as a side dish to your favorite Cedar Bay Grilling Company salmon.
Notes
Chicken broth is lent friendly, but if abstaining from all meat products, substitute seafood stock, vegetable stock, or water.
