- 2 pounds boneless skinless chicken breasts, butterflied or sliced thin
- 10.5 ounce condensed cream of chicken soup
- 3 Tablespoons creamy poppyseed dressing to taste
- 1 cup shredded mozzarella or cheddar cheese
- 5 ounces Ritz crackers crushed, 1 sleeve
Preheat the oven to 400°F (200°C).
Prepare the chicken: Trim and butterfly the chicken breasts, then lay them in an even layer in the bottom of a 9x13-inch (23x33 cm) casserole dish.
Add the creamy layers: Spread the cream of chicken soup evenly over the chicken. Then drizzle the poppyseed dressing on top and gently spread to coat.
Top with cheese: Sprinkle the shredded mozzarella (or cheddar) evenly across the surface.
Add the crunch: Crush one sleeve of Ritz crackers and sprinkle the crumbs evenly over the top of the casserole.
Bake: Place the dish in the preheated oven and bake uncovered for 40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the topping is golden and crisp.
