Poppyseed Chicken Bake

If you’re craving something cozy, creamy, and just plain comforting, this Poppyseed Chicken hits the spot. Tender chicken breasts smothered in a creamy, cheesy sauce, topped with buttery Ritz crackers—it’s the ultimate crowd-pleasing casserole. Perfect for busy weeknights or when you want to bring something easy (and delicious!) to a potluck. Only 5 ingredients, and so simple. 

This recipe couldn’t be simpler—just layer, bake, and enjoy. The creamy poppyseed dressing adds a touch of tang and sweetness that balances the richness of the soup and cheese perfectly.

What You Need for Poppyseed Chicken

  • 2 pounds (900 g) boneless, skinless chicken breasts, butterflied or sliced thin
  • 1 (10.5-ounce / 298 g) can condensed cream of chicken soup
  • 3–5 tablespoons (45–75 mL) creamy poppyseed dressing, to taste
  • 1 cup (4 ounces / 113 g) shredded mozzarella or cheddar cheese
  • 1 sleeve (about 5 ounces / 142 g) Ritz crackers, crushed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken: Trim and butterfly the chicken breasts, then lay them in an even layer in the bottom of a 9×13-inch (23×33 cm) casserole dish.
  3. Add the creamy layers: Spread the cream of chicken soup evenly over the chicken. Then drizzle the poppyseed dressing on top and gently spread to coat.
  4. Top with cheese: Sprinkle the shredded mozzarella (or cheddar) evenly across the surface.
  5. Add the crunch: Crush one sleeve of Ritz crackers and sprinkle the crumbs evenly over the top of the casserole.
  6. Bake: Place the dish in the preheated oven and bake uncovered for 40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the topping is golden and crisp.
  7. Serve hot: Remove from the oven, let rest for a few minutes, and enjoy!
