Beef Barbacoa

- 4 lb beef round roast
- 2 Tbs olive oil
Sauce
- 1/3 cup apple cider vinegar
- 4 Tbs chipolte salsa or chipolte peppers
- 1 tsp adobo sauce
- 1/4 cup lime juice
- 1 cup chicken stock
- 1/3 cup minced garlic
- 2 Tbs cumin
- 2 tsp dried oregano
- 1 tsp black ground pepper
- 1 Tbs Garlic salt
Put sauce ingredients in a blender, and blend until smooth
Heat oil in a saute pan, and sear beef round roast on all sides to lock in juices
Put seared roast in crockpot, pour sauce over top
Cook on high heat for 6 hours
Shred and serve in tacos, burritos, salads, etc.
