Slow Cooker Chicken Tortilla Soup
A simple slow cooker chicken tortilla soup, loaded with beans, peppers, corn, and shredded chicken, and layers of flavor. An easy recipe that is tossed in the slow cooker, but tastes like it requires lots of work.

- 1 ½ pounds chicken breasts boneless and skinless
- 1 onion diced
- 3 cloves garlic minced
- 29 ounces Rotel diced tomatoes 2 cans
- 15 ounces black beans drained and rinsed
- 15 ounces corn fresh, frozen, or canned
- 4 cups chicken broth
- 3 bell peppers diced
- 1/2 cup lime juice
Spices
- 1 Tablespoon Chili powder
- 1 Tablespoon Chipotle powder
- 1 teaspoon Cumin
- 1 Tablespoon Onion Powder
- 1 Tablespoon Garlic Powder
- Salt and pepper to taste
Toppings
- tortilla strips
- shredded cheese
- avocado
- sour cream
- lime
- cilantro
Add chicken, spices, onion, garlic, Rotel diced tomatoes, black beans, corn, chicken broth, and bell peppers to the slow cooker.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and tender.
Remove the chicken, shred with two forks, and return it to the slow cooker.
Stir in fresh lime juice and adjust seasoning to taste.
Serve hot with your favorite toppings like tortilla strips, cheese, sour cream, avocado, and cilantro.
