How to Make Slow Cooker Chicken Tortilla Soup

This recipe couldn’t be easier.

Step 1: Add everything to the slow cooker

Place chicken, spices, onion, garlic, tomatoes, beans, corn, broth, and bell peppers into the slow cooker.

Step 2: Cook low and slow

Cook on:

  • Low for 6–7 hours, or
  • High for 3–4 hours

Step 3: Shred the chicken

Remove the chicken, shred it with two forks, and return it to the slow cooker. Or shred it right in the slow cooker if you’d like. 

Step 4: Finish with lime

Stir in fresh lime juice for a bright, fresh finish.

Ingredients

  • 1 ½ pounds chicken breasts boneless and skinless
  • 1 onion diced
  • 3 cloves garlic minced
  • 29 ounces Rotel diced tomatoes 2 cans
  • 15 ounces black beans drained and rinsed
  • 15 ounces corn fresh, frozen, or canned
  • 4 cups chicken broth
  • 3 bell peppers diced
  • 1/2 cup lime juice

Spices

  • 1 Tablespoon Chili powder
  • 1 Tablespoon Chipotle powder
  • 1 teaspoon Cumin
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Garlic Powder
  • Salt and pepper to taste

Toppings

  • tortilla strips
  • shredded cheese
  • avocado
  • sour cream
  • lime
  • cilantro

Instructions

  • Add chicken, spices, onion, garlic, Rotel diced tomatoes,  black beans, corn, chicken broth, and bell peppers to the slow cooker.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and tender.
  • Remove the chicken, shred with two forks, and return it to the slow cooker.
  • Stir in fresh lime juice and adjust seasoning to taste.
