- 1 lb ground beef 80/20
- 6 small flour tortillas
- 6 slices American cheese
- Salt and pepper
- Shredded lettuce
- Diced tomatoes
- Sliced pickles
- Diced red onion
- Burger sauce
Preheat a cast iron skillet or griddle over medium-high heat. Have your toppings prepped and ready to go—these cook fast.
Take your pound of ground beef and divide into 8 even pieces. Roll ground beef into 2-oz balls. Press each ball onto a tortilla, spreading evenly. It should be a thin layer of ground beef.
Place tortilla meat-side down onto hot skillet or griddle. Smash it gently with a spatula if needed, cook 2–3 minutes until browned and edges are crispy.
Flip, add cheese, and cook another 1–2 minutes, until cheese is melty, and ground beef is cooked through. You want the tortilla to get crisp.
Remove, fold into a taco, and top with lettuce, tomato, onion, pickles, and sauce.
Serve hot and enjoy!
