Ingredients

  • 1 lb ground beef 80/20
  • 6 small flour tortillas
  • 6 slices American cheese
  • Salt and pepper
  • Shredded lettuce
  • Diced tomatoes
  • Sliced pickles
  • Diced red onion
  • Burger sauce

Instructions

  • Preheat a cast iron skillet or griddle over medium-high heat. Have your toppings prepped and ready to go—these cook fast.
  • Take your pound of ground beef and divide into 8 even pieces. Roll ground beef into 2-oz balls. Press each ball onto a tortilla, spreading evenly. It should be a thin layer of ground beef.
  • Place tortilla meat-side down onto hot skillet or griddle. Smash it gently with a spatula if needed, cook 2–3 minutes until browned and edges are crispy.
  • Flip, add cheese, and cook another 1–2 minutes, until cheese is melty, and ground beef is cooked through. You want the tortilla to get crisp.
  • Remove, fold into a taco, and top with lettuce, tomato, onion, pickles, and sauce.
