Strawberry Feta Spinach Salad

The perfect simple spinach salad side, complete with juicy berries, crunchy almonds, and flavorful feta and the most delicious homemade dressing.

Ingredients

  • 10 ounce bag baby spinach
  • 1 cup sliced strawberries or other fresh berries
  • 1/4 cup almond slivers or pecan pieces
  • 1/4 cup feta crumbles

Dressing

  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 1/3 cup white sugar
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon minced red onion

Instructions

  • Whisk dressing ingredients together in a medium sized bowl.
  • Cover, and chill in the fridge for at minimum one hour.
  • About 5-10 minutes before serving, toss spinach, strawberries, almonds, feta, together in a large bowl.
  • Top with chilled dressing and toss again.

Notes

Only make as much as you will eat, this does not keep well.
Toss in dressing only a few minutes before eating, as the spinach can wilt and get soggy.
