Strawberry Feta Spinach Salad

Summer salads are our favorite, from Easy Pasta Salad to Red Bliss Potato Salad with Dill, we love a good side salad. And this spinach salad has it all. Easy, flavor, and robustness.

It is really similar to this Strawberry Pecan Spinach Salad but with a richer dressing, and almonds and feta rather than pecans. But when it comes to spinach salads, we love fruit, nuts, and cheeses, just like this Apple Spinach Salad with Balsamic Vinegar Dressing! So give this version a try and see what you think.

What You Need

For the Salad:

  • 10-ounce bag of baby spinach
  • 1 cup sliced strawberries (or other fresh berries)
  • 1/4 cup almond slivers or pecan pieces
  • 1/4 cup feta crumbles

For the Dressing:

  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 1/3 cup white sugar
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon minced red onion

Instructions

  1. Prepare the Dressing:
    • In a medium-sized bowl, whisk together the toasted sesame seeds, poppy seeds, sugar, olive oil, balsamic vinegar, paprika, Worcestershire sauce, and minced red onion until well combined.
    • Cover the bowl and chill the dressing in the fridge for at least one hour to let the flavors meld together.
  2. Assemble the Salad:
    • About 5-10 minutes before you are ready to serve, toss the baby spinach, sliced strawberries, almond slivers or pecan pieces, and feta crumbles together in a large bowl.
    • Pour the chilled dressing over the salad and toss again to evenly coat all the ingredients.
  3. Serve and Enjoy:
    • Serve the salad immediately to enjoy the fresh flavors and crisp textures.

Notes

  • Freshness is Key: Only prepare as much salad as you will eat in one sitting. This salad does not keep well, as the spinach can wilt and become soggy if left in the dressing for too long.
  • Timing Matters: Toss the salad with the dressing just a few minutes before eating to maintain the best texture and flavor.

Ingredients
