It is really similar to this Strawberry Pecan Spinach Salad but with a richer dressing, and almonds and feta rather than pecans. What You Need
For the Salad:
- 10-ounce bag of baby spinach
- 1 cup sliced strawberries (or other fresh berries)
- 1/4 cup almond slivers or pecan pieces
- 1/4 cup feta crumbles
For the Dressing:
- 2 tablespoons toasted sesame seeds
- 1 tablespoon poppy seeds
- 1/3 cup white sugar
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 teaspoon paprika
- 1/4 teaspoon Worcestershire sauce
- 1 tablespoon minced red onion
Instructions
- Prepare the Dressing:
- In a medium-sized bowl, whisk together the toasted sesame seeds, poppy seeds, sugar, olive oil, balsamic vinegar, paprika, Worcestershire sauce, and minced red onion until well combined.
- Cover the bowl and chill the dressing in the fridge for at least one hour to let the flavors meld together.
- Assemble the Salad:
- About 5-10 minutes before you are ready to serve, toss the baby spinach, sliced strawberries, almond slivers or pecan pieces, and feta crumbles together in a large bowl.
- Pour the chilled dressing over the salad and toss again to evenly coat all the ingredients.
