Notes

Updated October 2026 based on reader feedback: Added baking times for muffins and mini loaves, plus sugar tips. I'll be remaking this recipe soon and will fine-tune it from there.
Muffins: Fill lined muffin cups about 2/3 full and bake about 20 minutes, until a toothpick comes out clean.
Mini loaves: Bake about 35 minutes.
Sugar: Brown sugar works in place of white sugar. Use 1/2 cup for a less sweet bread, or up to 1 cup if your bananas aren't very ripe.
You can add in a cup of chocolate chips. I recommend cutting the sugar down to 1/2 or 3/4 cup if adding chocolate chips in.
