Ingredients

  • 24 King’s Hawaiian Rolls
  • 2 lbs ground beef
  • 1 ounce taco seasoning divided
  • ½ cup butter melted
  • 10 slices Colby Jack cheese adjust as needed to fully cover the meat layer
  • Optional toppings: pickled jalapeños shredded lettuce, pico de gallo, sour cream, diced onions

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F.

Cook the Taco Beef:

  • In a large skillet over medium heat, brown the ground beef.
  • Drain excess grease.
  • Stir in half of the taco seasoning packet plus 1–2 tablespoons water (optional).
  • Cook for 1–2 minutes until well coated, then remove from heat.

Prep the Rolls

  • Without separating the rolls, slice the entire sheet horizontally to create a top and bottom slab.
  • Place the bottom half in a baking dish.

Assemble the Sliders

  • Spread the taco beef evenly over the bottom rolls.
  • Lay the 10 slices of Colby Jack cheese across the beef, overlapping as needed so the cheese covers the entire layer.
  • Place the top slab of rolls back on.
  • Make the Taco Butter: Mix the ½ cup melted butter with the remaining half packet of taco seasoning until smooth.

Brush & Bake:

  • Brush the taco butter generously over the tops of the rolls.
  • Cover with foil and bake for 20 minutes. (optional)
  • Remove foil for the last 3–5 minutes if you want the tops extra golden.

Serve

  • Slice into individual sliders and serve warm. Add toppings like shredded lettuce, sour cream, salsa, or jalapeños if desired.

Notes

Tips
Extra cheesy? Add shredded Mexican blend under the slices.
Spicier version: Mix a little hot sauce or chipotle powder into the taco butter.
Make-ahead friendly: Assemble completely, refrigerate, and bake when ready to serve.
