- 2 cups rotisserie chicken shredded
- 1 cup Coleslaw mix
- 1/2 cup peanut sauce store-bought or homemade
- 1 bunch fresh cilantro chopped
- 4 tortillas for wrapping, flour, whole wheat, or lettuce leaves for low-carb
Optional Fillings
- 1/2 cup Cucumbers sticks
- 1/2 cup Carrots matchsticks
- Peanut Sauce for dipping or drizzling
Mix the filling: In a bowl, combine shredded chicken, and cabbage. Add peanut sauce and toss until everything is evenly coated.
Assemble the wrap: Lay out a tortilla and spoon the peanut chicken mixture down the center. Add cilantro, and any extras you might want (carrots and cucumbers and extra peanut sauce)
Wrap it up: Fold in the sides and roll tightly from one end to the other.
Garnish & serve: Sprinkle with chopped peanuts and enjoy immediately.
