Turkey Grinder Salad Sub

Juicy turkey, melty provolone, and a creamy, tangy grinder salad piled high on a garlic butter toasted hoagie roll. This Turkey Grinder Salad Sub is the ultimate flavor-packed sandwich for lunch or an easy weeknight dinner.

Ingredients

For the Sandwich

  • 4 Hoagie rolls
  • 16 ounces Turkey Deli Meat Land O’Frost Bistro Favorites Applewood Smoked Turkey
  • 8 slices Provolone cheese
  • 1/2 Head iceberg lettuce shredded
  • ½ cup Sliced pepperoncini
  • ½ Small red onion thinly sliced (soaked in water to reduce bite)
  • 2 Beefsteak tomatoes thinly sliced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon Red pepper flakes

Garlic Butter (optional)

  • 3 tablespoons Butter
  • ½ teaspoon Minced garlic
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 tablespoon Fresh parsley
  • 2 tablespoons Parmesan

Grinder Salad Dressing

  • ½ cup Mayonnaise
  • 1 tablespoon Red wine vinegar
  • 2 teaspoons Pepperoncini liquid
  • 1 tablespoon Olive oil
  • ½ cup Grated parmesan
  • 1 teaspoon Minced garlic clove
  • 1 teaspoon Oregano

Instructions

Prep the Garlic Butter & Rolls

  • Preheat oven to 375ºF.
  • Melt butter in a microwave-safe dish and stir in garlic, salt, pepper, parsley, and parmesan.
  • Slice hoagie rolls lengthwise. Brush garlic butter generously on the inside of the rolls.

Toast the Sandwich Base

  • Place rolls cut-side up on a baking tray.
  • Layer the bottom halves generously with turkey and top with provolone slices.
  • Toast for 5–8 minutes, until bread is golden and cheese is melted.

Make the Grinder Salad

  • While the sandwiches toast, in a medium bowl whisk together all dressing ingredients. Taste and adjust to your personal preferences — add extra pepperoncini liquid for tang or more oregano for herbiness, etc.
  • Shred the lettuce and drain the red onions. Toss lettuce, pepperoncini, and onions with the dressing until fully coated.

Assemble the Sandwich

  • Remove toasted hoagies from the oven.
  • Pile a generous heap of grinder salad over the melted turkey and cheese.
  • Add tomato slices and sprinkle lightly with salt, Italian seasoning, and red pepper flakes.
  • Top with the remaining half of the roll, slice in half, and serve immediately.
