If you love a stacked deli sandwich with big flavor and plenty of crunch, this Turkey Grinder Salad Sub is about to be your new obsession. Inspired by the viral grinder sandwich trend, this version gets a serious upgrade thanks to the creamy grinder salad dressing, which goes perfectly with smoked turkey deli meat, and tomato slices.

What you need to make this deli style grinder sub

Ingredients You’ll Need

For the Sandwich

  • 4 hoagie rolls
  • 16 ounces Land O’Frost Bistro Favorites Applewood Smoked Turkey
  • 8 slices provolone cheese
  • 1 head iceberg lettuce, shredded
  • ½ cup sliced pepperoncini
  • ½ small red onion, thinly sliced (soaked in water to reduce bite)
  • 2 beefsteak tomatoes, thinly sliced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes

Garlic Butter

  • 3 tablespoons butter
  • ½ teaspoon minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon fresh parsley
  • 2 tablespoons parmesan

Grinder Salad Dressing

  • ½ cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 2 teaspoons pepperoncini liquid
  • 1 tablespoon olive oil
  • ½ cup grated parmesan
  • 1 teaspoon minced garlic clove
  • 1 teaspoon oregano

How to make the deli style grinder salad sub sandwich

How to Make a Turkey Grinder Salad Sub

1. Prep the Garlic Butter & Rolls

Preheat oven to 375ºF.
Melt butter in a microwave-safe dish and stir in garlic, salt, pepper, parsley, and parmesan.

Slice hoagie rolls lengthwise. Brush garlic butter generously on the insides and outsides of the rolls.

2. Toast the Sandwich Base

Place rolls cut-side up on a baking tray.
Layer the bottom halves generously with turkey and top with provolone slices.

Toast for 5–8 minutes, until bread is golden and cheese is melted.

3. Make the Grinder Salad

While the sandwiches toast, whisk together all dressing ingredients in a medium bowl. Taste and adjust — add extra pepperoncini liquid for tang or more oregano for herbiness.

Shred the lettuce and drain the red onions. Toss lettuce, pepperoncini, and onions with the dressing until fully coated.

The key here? Don’t underdress. You want it creamy and flavorful.

4. Assemble the Sandwich

Remove toasted hoagies from the oven.

Pile a generous heap of grinder salad over the melted turkey and cheese.

  • Toast the outside of the bread. That garlic butter creates next-level flavor and crunch, so feel free to slather it on all sides of your bread. 
  • Serve immediately. The contrast between warm sandwich and cool salad is magic.
