I have an obsession with peanut butter cups! And I especially love Easter time when you can get the eggs, as they have extra peanut butter filling. The thing is, they often have a lot more sugar than I want, and very little nutritional value.  So obviously I decided I needed to make my own version, with far less added sugar, and extra protein to make them a decent snack option when I need a treat! So here is the video of how I made them. Yum!

And boy did I ever find success! These peanut butter cups are seriously yummy, and when using natural peanut butter, and raw honey, the added sugar is a fraction of what you would find in the ever popular candy! And then there is the protein! The best, grass fed, collagen peptide protein ever. Odorless, flavorless, and high quality. With 3 full scoops, you get a healthy helping of protein in each cup. I pretty much add Vital Proteins to anything I can, and adding them to treats is my favorite.

This recipe makes 12 good sized peanut butter cups, which means 1 cup is enough to satisfy my craving for peanut butter and chocolate, and I can hide the other 11 away from my kids, to enjoy when I feel the sweet tooth coming on.  Of course, with raw honey, oat flour, natural peanut butter, and protein, this is one treat I do not mind my kids eating. Especially my picky eater.

Can you guys believe it is already April? I officially launched my blog 3 years ago today. It seems like just yesterday, as well as forever ago at the same time. What a fun journey this has been. I remember launching it and then realizing it was April Fool’s day, and a lot of people thought I was joking. Of course, my photos were terrible, my writing…well brief at best…so I can understand why they may have felt it was a joke.  But the recipes were/are delicious, and with time and practice, comes improvement. I am happy to say my blog is no longer a joke!

And neither are these treats. The benefits of collagen peptides are many, including stronger hair and nails, joint health, and a leaner, more athletic body! Now, I am not saying you are going to have a sleek and slim athletic body by eating these peanut butter cups, but if you are wanting a treat with some greater health, this is definitely the way to go.

I mean, just look at that filling. I could eat just that with a spoon, and I must confess I have. This recipe allows for a healthy filling center, so go ahead and be generous. Consider dividing the filling into 12 pieces before putting them into the muffin tins. I had a little leftover, but didn’t mind just eating it. If you are not fond of dark chocolate, feel free to sub out some semi-sweet or even milk, just recognize they have added sugar. Additionally, if you don’t want to use raw honey, or natural peanut butter, you can swap those out as well. But as written, this recipe is awesome, not too sweet, and the perfect cure to the insufferable sweet tooth!

Ingredients

  • 1 cup Natural Peanut Butter
  • 1/4 cup Raw Honey
  • 1/2 cup Oat Flour
  • 3 scoops Vital Proteins Collagen Peptides
  • 1/2 tsp Vanilla extract
  • 20 ounces dark chocolate chips melted

Instructions

  • In a large bowl combine peanut butter, raw honey, oat flour, Vital Protein Collagen Peptides, and vanilla.
  • Use a hand mixer to comine.
  • Set aside.
  • In a microwave safe bowl, melt chocolate in microwave by heating in 30 second intervals. Stir well between each. When the chocolate is mostly melted, remove and stir until silky smooth.
  • Line a muffin win with foil liners.
  • Spoon about 3/4 Tbs melted chocolate into each tin
  • Scoop a ball of peanut butter filling out, and flatten into a patty, and press into the chocolate.
  • Spoon additional chocolate over the top
  • Tap muffin tin to even out the chocolate
  • Refrigerate for 10 minutes or so to set up the chocolate.
  • Enjoy!
