You only need a handful of ingredients to make this easy slow cooker casserole.

Cream of Chicken Soup with Herbs: The cream of chicken soup creates the creamy sauce that coats the potatoes and ham. Using the herb variety adds extra flavor without needing a long list of seasonings.

Sour Cream: Sour cream adds richness and a slight tang that balances the creamy sauce.

Garlic: A tablespoon of minced garlic gives the casserole plenty of savory flavor.

Butter: Melted butter adds richness and helps create a luscious, creamy sauce.

How to Make Slow Cooker Cheesy Ham and Potatoes

Step 1: Make the sauce

In a large bowl, or the crock of your slow cooker, combine the cream of chicken soup with herbs, sour cream, minced garlic, salt, pepper, and melted butter.

Stir until everything is well combined and creamy.

Step 2: Add the potatoes and ham

Add the frozen hash browns and cubed ham to the bowl with the sauce.

Stir gently until the potatoes and ham are evenly coated.

Step 3: Add the cheese

Stir in about half of the shredded cheddar cheese, reserving the rest for the top.

Step 4: Transfer to the slow cooker

Spray the inside of your slow cooker with nonstick cooking spray.

Pour the cheesy ham and potato mixture into the slow cooker and spread it into an even layer.

Sprinkle the remaining cheddar cheese over the top, or stir it in.

Because slow cookers vary, start checking toward the lower end of the cooking time to prevent the potatoes from becoming overly soft.

Scoop the cheesy ham and potatoes into bowls and serve hot.

For a fresh finishing touch, sprinkle with chopped parsley or sliced green onions.

  • Don’t thaw the hash browns. One of the best things about this recipe is that you can start with frozen hash browns. Just add them straight to the mixture.

  • 1 cup sour cream
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • ½ cup butter melted
  • 2 cups shredded cheddar cheese divided
  • 16 ounces cooked ham cubes
  • 30 ounces frozen hash browns

Instructions

  • Spray a 5- to 6-quart slow cooker with nonstick cooking spray.
  • In a large bowl, combine the cream of chicken soup, sour cream, minced garlic, salt, pepper, and melted butter. Stir until smooth.
  • Add the frozen hash browns and cubed ham. Stir gently until everything is evenly coated.
  • Stir in 1 cup of the shredded cheddar cheese.
  • Transfer the mixture to the prepared slow cooker and spread evenly.
  • Sprinkle the remaining 1 cup of cheddar cheese over the top.
  • Cover and cook on LOW for 4–5 hours, or until the potatoes are tender and the casserole is hot and bubbly.
