Chocolatey, buttery, toffee-y, cinnamon-y, coconut-ty, and oh so graham cracker-y. These Graham Cracker Toffee Magic Bars will rock your tastebuds. Basically they are the best thing to ever happen to a graham cracker. You’re Welcome.

This recipe is like a mix between a magic bar and a toffee, and a s’more (minus the marshmallows). It has a lot of flavors packed into a very easy, very tasty, little package.
It is one of my family’s favorites. Speaking of family, I would be remiss if during this month of gratitude I did not take a second to express my gratitude for a seriously awesome family and extended family. I have a huge extended family. Not only do I come from a family with 10 children, but both my parents come from large families, and my husband comes from a large family. Plus a ton of my siblings and in-laws are married, and have kids, and so do my cousins, etc. Basically there are a lot of us!
A family gathering at our house usually involves 20-30 people, and those are just siblings, spouses, and kids.
Because there are 1o kids in my family I frequently get asked if we are all biologically related. People want to know if any are adopted, or if my parents have been divorced. Although all of my siblings are biological, I am lucky to say that adoption has blessed my extended family in many ways. I have adopted cousins, nieces, and nephews, and can’t imagine our family without them. According to the 2010 U.S. Census, more than 1.5 million American families have been touched by adoption. Isn’t that an amazing statistic?
I think it is really cool, and I wanted to share it because November 21 is National Adoption Day. While I rarely talk about this kind of stuff on my blog, adoption is something I feel very strongly about, and want to support. National Adoption Day is really cool because it is a national effort to raise awareness of the 100,000+ kids in foster care waiting for loving, forever, families.
Last year my husband and I seriously considered fostering to adopt. In fact, we did all the paperwork, home study, and most of the classes required to get certified for foster care. Due to some changes in our circumstances we had to put that on hold, but we have seen how amazing adoption is, and know first hand how much it can bless both the kids and the families who are involved. Our family would certainly not be the same without adoption.
Family is so important, and such a huge part of my personal identity, that even recipes like this one come back to family for me. It is a “family” recipe, a recipe I make with my kids, and that brings up family memories.
One of my favorite stories from my childhood was the time my mom found my sister and I in our underwear, under the table, dancing on a huge pile of graham crackers, and happily pouring milk over the top. It was such a mess, and my mom was so overwhelmed, she just put our shoes on us and took us out for ice cream.
I grew up making treats with graham crackers, or even eating them like cereal, broken up into a bowl and covered with milk.
And these are easy to make, so a great recipe to let the kids get in on.
You really just need an adult to help with the melting of the butter and sugar, and then getting the tray in and out of the oven. But kids can help top this treat with their favorite add-ons.
So let’s get to the recipe! And you guys, make this for National Adoption Day, it will be a hit with the whole fam.

Graham Cracker Toffee
Equipment
Ingredients
- 14 Graham cracker sheets
- 1 cup Packed brown sugar
- 1/2 cup Salted butter
- 3 Tbs Heavy cream
- 1 cup Semisweet chocolate chips
- 1/3 cup Chopped pecans toasted
- 1/3 cup Coconut shreds sweetened
- 1/3 cup Cinnamon chips
- 1 tsp Salt
Instructions
- Preheat oven to 350 degrees F.
- Line an 11 x 15-inch baking sheet (or jelly roll pan) with parchment paper
- Set your graham crackers out so they form a single layer across the bottom of the tray, and there are no gaps. Set aside.
- In medium heavy bottom saucepan, heat your butter over medium-high heat until it is melted. Then stir in your brown sugar, and continue stirring as it comes to a boil.
- Let it boil for 2 minutes, stir once or twice.
- Remove from heat, and pour over graham cracker layer, using a spatula to spread it out so it is nice and even.
- Bake for 6 minutes or until the butter mixture is all bubbly.
- Meanwhile, heat heavy whipping cream in a microwave safe bowl for 45 seconds to a minute. Then stir in chocolate chips, and continue stirring until smooth.
- When graham crackers have baked 6 minutes, remove pan and immediately spread chocolate mixture over the top of the graham crackers.
- Sprinkle nuts, coconut, cinnamon chips, and salt over the top.
- Refrigerate for at least 30 minutes, then cut into pieces and serve.

Yes! I love the idea of a Saltine, but mmmmmm for Graham Crackers. I think the salt from the saltines would be amazing though.
