Crunchy wonton cup filled with LLOYD’S® meats BBQ beef, pico, cheese, and guac for an outside the box snack that only takes minutes to prepare!
Does anyone else’s kids ALWAYS come home from school hungry? I mean seriously. Whether I pack a lunch for them, they pack their own, or they eat at school, they come home ravenous. My kids are in elementary school, I am seriously worrying about the teenage years. They are going to eat us out of house and home!
My kids are, well, spoiled when it comes to foods. One of the perks of a food blogger for a mom is always having something to eat in the fridge. One of the drawbacks is it might be the 20th time you’ve had it (recipe testing), or you have to eat it cold (waiting for photos to be taken), or it is just plain too fancy. My kids crave things like out of a box macaroni and cheese. But instead they get my recipes. Or cereal.
For real though. It is usually a full fledge meal, or a breakfast for dinner kind of day. Not much between. And snacks are always problematic around here. I want them to not just eat chips and cookies. Ya know? But I also rarely feel up for creating something for snack time. Apples and peanut butter, cheese sticks, and carrots only get me so far.
That is why I was super excited to find LLOYD’S® meats Shredded Beef in BBQ Sauce, which is a Hormel branded product. The tub is awesome, and makes it so easy to make a quick snack without any hassle. No slow roasting a brisket, or making my own BBQ sauce. All I do is microwave and presto! Snack is done!
These tasty little BBQ Beef Mini Taco Cups are ridiculously easy to make, are ideal for after school snacking, and even make a pretty rad party appetizer. And they are almost no work at all.
To make them you just need to grab a package of wonton wrappers, which you can usually find in the produce section of your local grocery store, by the fresh herbs. Then put them inside a muffin tin, forming them to each little cup. Then bake at 325 degrees F for about 10-12 minutes until golden brown. You guys, these can be made ahead of time, and stored in an airtight container or bag to keep fresh.
Then, heat the meat according to package directions (Basically microwave for a few minutes)
Then assemble with pico de gallo (make your own or buy it), cheese, and guacamole (make or buy, up to you)! Basically, if you keep these toppers on hand, you can turn the assembly over to the kids themselves to assemble. So easy!

BBQ Beef Mini Taco Cups
Ingredients
- 1 cup LLOYD’S® meats BBQ beef
- 12 wonton wrappers
- Pico de Gallo
- Cheddar cheese shred
- Guacamole
Instructions
- Preheat oven to 325 degrees
- Place wonton wrappers in a muffin tin, not greased.
- Bake for 10-12 minutes until golden brown.
- Heat meat according to package directions
- Assemble by putting a scoop of BBQ beef in each cup, and topping with Pico de Gallo, cheddar cheese shreds, and guacamole.
