Would you believe that the first time I had coffee cake was after I got married? Granted, I got married young, but had I known what I was missing, coffee cake would have been in my life much sooner. The trouble is the name. I am not a coffee drinker, so I never thought I would like coffee cake! I was wrong. So terribly wrong. This is my favorite recipe ever. I hope you love it as much as I do. And since I love coffee cake so very much, I teamed up with a bunch of other bloggers to bring you a big old collection of coffee cake recipes for National Coffee Cake day.
If you didn’t realize there was a national coffee cake day, don’t feel bad. Most people have no idea. But it is awesome, and now you can celebrate in style. With happy taste buds.
The crumble on top of this cake uses white sugar, not brown, which is a little different for a coffee cake, but the true magic is in the white chocolate, the cream cheese, and the strawberry preserves. The combination is just so yummy, and leaves you wanting more.
I eat this stuff as dessert far more often than I eat it with my morning beverage. But how you choose to consumer is up to you. Just be sure you take time to make this, at least once. And did I mention it freezes well. Shhhhh, don’t tell my kids. I like to make one of these while they are at school, then cool it, cut it into individual servings, and freeze it. Then I can pull a slice out whenever I feel like it. I pop it in the microwave for 30 seconds and be THAT mom…the one that hides treats from the kids.
I swore I would never do that. When I was a kid my mom would hide Hagen Daaz ice cream bars in the freezer. They were only for her. If you snuck one you were in HUGE trouble. Once I had a friend who was having a bad night. We were AIM-ing..ya know? AOL instant messenger. It was the BIG thing when I was in high school. Anyhow, we were IM-ing late at night, and he said he was having a really bad week. So I went and grabbed one of my mom’s secret stash ice cream bars, snuck out and drove it to his house. I knocked on his window, and he came out all groggy, and didn’t want to eat it. Well…being ice cream and all, it wouldn’t last long enough to be put back, so I ate the dang thing. So much guilt over that, stealing my mom’s special treat, sneaking out, “borrowing” the car without asking. All the guilt and he didn’t even eat it. Hahahahah
Anyway, the point was, I never thought I would be the mom that hid treats. But I am. And I am totally ashamed of it. But it is what it is.
But this is a treat I like to hide.
White Chocolate Strawberry Cream Cheese Coffee Cake
Ingredients
Cake Layer
- 2 1/4 cups flour
- 3/4 cup sugar
- 3/4 cup butter
- 1 egg beaten
- 3/4 cup sour cream
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla
- 3/4 cup white chocolate chips
Cream Cheese Layer
- 1 egg beaten
- 1/4 cup sugar
- 8 ounces cream cheese
- 1/2 cup strawberry preserve
Instructions
- Preheat oven to 350
- Grease a 10- inch springform or deep round foil pan.
- Combine 2 1/4 cups flour and 3/4 cup sugar
- Cut in 3/4 cup butter.
- Scoop out 1 cup crumb mixture, set aside.
- To remaining crumb mixture add beaten eggs, 3/4 cup sour cream, salt, baking powder, and baking soda.
- Mix well. Then fold in the white chocolate chips.
- Spread mixture over bottom and up sides of prepared pan.
- Then combine softened cream cheese with vanilla, beaten egg, and 1/4 cup sugar.
- Spread over the mixture in each pan.
- Spread 1/2 cup raspberry preserve over the top of the cream cheese mixture.
- Add lime zest to the top.
- Spread remaining crumb mixture over the top, distributing evenly
- Bake coffee cake for 45 to 55 minutes.
- Test with toothpick for doneness.
- Cool the cake at least half an hour before serving.
- Better to make ahead and refrigerate.

On the Strawberry Coffee Cake recipe in the directions it says to add the lime juice, but lime juice is not mentioned in the ingredients. Then also in directions, it dosn’t state what to do with the white chocolate chips. Can you please correct this.

Thanks Yolanda, I was obviously distracted when I wrote this. You mix in the white chocolate chips, not lime juice. There is no lime in this recipe. Thanks for helping out!
