Green Smoothie Pops. These are popsicles made from a green smoothie. They are chock full of fruits and greens, and super tasty too! And I am making them in honor of my dad!
Warning: This post is totally sappy as I am dedicating it to three men I love so much: My Dad, My Grandpa, and My Husband.
Father’s Day is just around the corner, and as I have been thinking about the wonderful Fathers I get to see in my life, and interact with, I am just so grateful.
So I am going to tell you about a few of them:
My Dad
My Dad is one of the greatest men I know. He has always been a wonderful father and grandfather. One of the things I love best about my dad is he has a zest for life and the twinkle in his eye. I know it sounds cheesy, but he just knows how to appreciate things. He is the kind of man that laughs so hard he cries, and then starts wheezing and can’t breathe, and it is so funny, you can’t help but laugh too. It is infectious!
My dad has not had the easiest life, but despite his trials, he makes things fun. He tells stories, takes the kids camping, and spoils all of us with love.
My dad is a vegetarian, and eats very healthy, and I…well…don’t. Despite his healthy lifestyle, he loves to spoil my kids with “treats,” and he discovered a way to do that while still staying true to his dietary lifestyle. Green Smoothie Pops!
My kids love them, and all the grandkids beg him for these homemade popsicles every time they go to his house. The fact that he takes time to make a healthier treat for his grandkids is just one example of how much he shows amazing love, and is just the best.
Plus they are super easy to make, you just gather the ingredients, blend, pour into molds, and freeze!
And do you know what you guys? These popsicles taste awesome. I can’t even give him a hard time about them because they are so good, so instead I am going to give him a hard time with the card I give him, which has a tie, and depicts several different cuts of meat, and reads, “You are a cut above the rest!” It is an American Greetings cards and I think it is hysterical.
There are plenty of traditional American Greetings Father’s Day cards to select from, in fact I went to Walmart and got one for my husband and his parents, and my mom got one for my dad and for my sister to give my dad. So while the sentimental and traditional cards are available, this year you’ll also find many humorous and alternative cards to celebrate fathers too!
And cards isn’t all they have, there is also gift wrap, bows, bags, tissue paper, etc. I got my dad a new popsicle mold, and while I was picking up the card at Walmart I grabbed this cute striped wrapping paper and bow too! I hope he loves it.
I took a quiz called “What kind of Dad do you have?” and the answer was the “All American” Dad. In the description of what that means it said, “He’s proud to be an American, even prouder to be your Dad!” and I felt like that was spot on. My dad loves nothing more than bragging about his kids and grandkids, and sharing in our successes, and lifting us through our failures.

As you can see, my dad is a pretty great guy, and he got so many of his wonderful traits from his dad, my Grandfather.
My Grandpa
My Grandpa passed away in 2002, but he is still such a huge presence in my life. I feel his love for me frequently, and know how much his family meant to him.
I can’t even type this without getting teary eyed. He was the kind of man other people gravitated to because he had such genuine love for everyone. He was a small town doctor, and even though he moved away, (and passed away) over a decade ago, to this day I can’t visit that town without someone stopping me and asking if I am related (we have a strong family resemblance), and then go on to tell me all of the wonderful things he did for their family.
He is and was a remarkable man. And I celebrate him by sharing stories of his life with my kids, and by helping them get to know him and who he was, and how his life impacts theirs.
My Husband
The third man I am celebrating this Father’s Day is my husband. The father of my children, and the guy who brings laughter and fun into our life at home.
I love using the more humorous cards for him because that is one of the things I love most about him, his ability to find humor in every situation and bring that to our family. He doesn’t take life too seriously, something I tend to do far too often.
So we are going to celebrate by having a nice meal, probably followed up with these green smoothie pops, and by sharing our favorite jokes. I have the kids working on coming up with some good ones.

Green Smoothie Pops
Ingredients
- 5 cups spinach
- 3 cups coconut milk
- 2.5 cups frozen Sunshine Blend Dole Fruit strawberries, peaches, mandarin oranges
- 1 15 oz can with liquid diced mangos
- Popsicle molds
Instructions
- In a blender mix together the fruit, spinach and coconut milk, adjust if necessary to make it more green (less brown), or to make it less thick so it is easier to pour into the popsicle molds.
- Pour into the molds. Depending on the size of molds you use this makes 12-24 pops. Adjust amounts accordingly if you want more or less.
- Place sticks into molds, and put in freezer until frozen through, usually a minimum of an hour and a half.
- Remove from molds
- Enjoy
