You guys, this dressing takes a few ingredients, but is SO WORTH every single one. It is one of those dressings that make you sigh. Close your eyes. Moan. Then ravenously go for a second helping. Just writing about it has my mouth watering.
Oh my gosh, I just realized that I set the expectation for this dressing pretty high. Like ya know when you hear how amazing a movie is from everyone you have ever met, and even strangers in line at the grocery store. Then you go. And uh…total let down!? I know you know what I am talking about. Like you had such high expectations that only a movie with flying babies, dragons that talk, and Santa Claus literally delivering you winning lotto tickets in the theater, starring Robert De Niro, Al Pacino, and Tom Hanks could ever possibly live up to the hype.
Well, don’t let my description make your expectations too high. I can’t guarantee De Niro here, but the fact is, I will NEVER buy any Honey Mustard dressing again. EVER. I am ruined for it by this beautifully tasty little concoction. Like see the little spill in the picture above? I wiped it up with my fingers, then licked them, so not a single drop would be wasted. But now I am trembling in fear that you will make it and hate it and think I am insane. And so I keep telling myself, “Some people actually like black licorice!” That is my way of saying, just because I like it doesn’t mean everyone else will, and that is ok.
But back to the dressing, let’s just talk about how pretty it is? I use two different mustards in this dressing. A honey dijon, and a whole grain dijon. You don’t necessarily have to use a honey dijon, you could use a regular dijon, and then add a little extra honey. But I loved the way the honey dijon brought a slightly different flavor to it. The whole grain dijon gives it a bit of texture, and some real body. Make sure you give your dressing a taste, the first batch I made was too acidic, but a half a tablespoon more of honey really made it awesome. So I recommend trying and adjusting after blending to make it fit your personal taste profile better.
Another awesome thing about this dressing is that it stays good in your fridge for up to 2 weeks if you keep it in an airtight container. I put mine in a mason jar. And it definitely won’t last the two weeks, as I am feeling highly encouraged to eat LOTS and LOTS of salads!
I will be sharing a tasty Chicken Cobb Salad using this dressing later in the week, so definitely check back. When I served it to my husband he asked if I really made the dressing? His disbelief was high praise!
5 Minute Honey Mustard Vinaigrette
Ingredients
- 1/4 cup white wine vinegar
- 1/4 cup distilled white vinegar
- 1/2 cup olive oil
- 1 1/2 Tbs honey dijon mustard
- 1 1/2 Tbs whole grain dijon mustard
- 4 Tbs honey
- Pepper to taste
Instructions
- Put all ingredients in a blender, blend until combined
- Store in airtight container in refrigerator for up to 2 weeks, shake well before serving
