Baked Fontinella Cheese Dip

Creamy, smooth, flavorful cheese dip, with fresh herbs, and crusty baguettes, perfect for a romantic night in! This dip is made with amazing cheese and olive oil, and it is delicious and flavorful.

Forget the popcorn! Watch a movie with this baked fontinella cheese dip and crusty baguettes!

Wait! What? Me telling you to skip the popcorn. Unheard of. I am a huge sucker for popcorn. And for me the more butter, salt and sweet the better!

But for today’s post I want to show you how to make a date night at home a little more romantic and fun with this fantastic baked fontinella cheese dip! Fontinella is a semi hard cheese, made by Stella Cheeses. The name comes from the Italian word “fondere,” which means melt. And that is what it does best! That and make your taste buds happy.

By taking this Fontinella cheese, and mixing it with fresh herbs, and some EVOO, then baking it for 10 minutes in the oven, I have created a sweet, sharp, creamy, amazing dip that just begs for low lights, and lots of smooching! Some people like to add garlic to theirs, and it does pair nicely, but for date night in I like to skip the garlic!

Stella-Cheese-1Fontinella cheese is delicately sweet and creamy smooth, and just the right amount of sharpness. Holy cow! (Dairy pun intended)  You guys, it melts so well, and is amazing with grilled veggies and crusty baguettes. Imagine cuddling up on the couch with your favorite person, turning on a cozy movie, and sating your appetite with this flavorful, delightful, comfort food at its finest! I mean, why would you ever want to go out again?

So let’s get to making this tasty dip! It is ridiculously easy! Gather what you need, Fontinella Cheese, Olive Oil, Chives, and Fresh Thyme!

Cut your cheese into blocks or cubes. I used all 8 ounces and baked it in a 5 inch cast iron skillet, for a larger skillet you will need more cheese. Or plan on a thinner layer.

Put the cut cheese into your skillet, and spread it around so it is a fairly even layer.

Then drizzle some olive oil over the top.

Add you fresh herbs.

Then bake to perfection! I turned my broiler on and put my skillet about 6 inches from the top. It took about 6 minutes to get nice and melty! If you want to let it get a little brown it is super good that way too, but be sure to watch it carefully so you don’t burn it.

Then get your crusty baguette slices, and start dipping!

Ingredients

  • 8 ounces Stella Fontinella Cheese
  • 1 Tbs Extra Virgin Olive Oil
  • 1 Tbs fresh thyme
  • 1/2 Tbs chopped chives

Instructions

  • Preheat oven to 500 degrees, or Broil on High.
  • Cube Fontinella cheese, and put in a cast iron skillet (about 5-6 inch diameter)
  • Drizzle with olive oil
  • Sprinkle fresh herbs on top
  • Place skillet on top rack, about 5-6 inches from element
  • Bake for 5 minutes, check, and possible bake a minute or two more. Watch carefully so as not to burn.
  • Serve with fresh baguettes, grilled veggies, or pita chips!

      Yes! I have made it in the crock pot before, you won't get that golden top, but it will get melty and tasty.
