Baked or Fried Mozzarella Caprese Bites

I don’t know if you guys remember, but I won a recipe contest a few months back, and it was very exciting! Well now is your chance to do the same. Right now Farm Rich is hosting the Farm Rich Back Your Snack #contest. And the winning recipe gets $10,000

To enter you have to make a recipe using at least one Farm Rich product, and one fresh item from Walmart. Your snack can only have 6 ingredients or less, and must be submitted between now and Augist 23rd.

To help  get you thinking creatively I thought I would share a fun snack hack of my own using Farm Rich frozen snack products and Walmart fresh produce.

This Fried Mozzarella Stick Caprese Bites appetizer makes an awesome after school snack, or party fare. It is everything you’d want in a snack, with something fresh and tasty, tons of flavor, various textures, and it is SUPER DUPER easy to make. It takes only a few minutes to put together!

Caprese is a classic appetizer. My Dad lived in Italy for a time, and as a result, I grew up eating lots and lots of Italian food. And I have a deep love for mozzarella cheese, basil, balsamic, and tomato. One of my favorite ways to eat them is a classic Caprese, but sometimes it is just fun to change things up for extra flavor and texture.

When I was shopping at Walmart and saw the Farm Rich Mozzarella Sticks, I thought it would be really fun to take a classic appetizer, and change it up with some fried cheese instead of fresh.

And you guys! I am so glad I did. The breaded mozzarella sticks add some much needed crunch and fun to this appetizer. And the melty cheese is just plain delicious! I decided to add in some cucumber too, this makes it easier to pick up and hold, adds some fresh, light flavor, and additional crunch.

Baked or Fried Mozzarella Caprese Bites

Cucumber, tomato, fresh basil leaf, and a baked or fried mozzarella stick, all drizzled in balsamic glaze for a quick, easy, and tasty appetizer sure to please!

Ingredients

  • 5 Farm Rich Breaded Mozzarella Sticks baked or fried according to package directions
  • 10 slices of cucumber only 1 cucumber is needed
  • 10 slices of roma tomato about 2 tomatoes
  • 10 fresh basil leaves
  • 1/4 cup balsamic glaze purchase it already made, or reduce balsamic to make your own

Instructions

  • Bake or fry mozzarella sticks according to package directions. I fried mine and it takes about 2 minutes and 15 seconds.
  • Wash and slice your cucumber and tomatoes
  • Assemble by placing a cucumber down first, putting a tomato slice on top, followed by a fresh basil leaf.
  • Cut your mozzarella sticks in half, and place half on each caprese bite.
  • Skewer with toothpicks, and drizzle balsamic glaze or reduction on top.*
  • Serve immediately

Notes

* I buy my balsamic as a glaze, which means it is already reduced, and you can just drizzle it over the top. However, to reduce it yourself, simply bring about a cup of balsamic to a boil, and turn it down slightly, then let it simmer and reduce until it is about 1/3 the amount.
