Hi there, Eazy Peazy Mealz readers! Sarah here again from Whole and Heavenly Oven. Can you even believe we’re nearing the end of August already? This summer has flown and I don’t think it plans to slow down unfortunately.
Seeing how summer is coming to an end, I’m currently in a food mode I like to call eat-all-the-summer-things-because-now-is-the-only-time. That means sooooo much fresh garden produce, countless amounts of ice cream, and fresh fruit by the truckload. Must.eat.it.all.
But at the same time we’re all craving these things, you know we want to be anywhere but the kitchen right? I have a pretty sweet easy dinner solution for you today and spoiler alert: tomatoes are the star. You’re gonna love it.
So here’s how we start. We take several ginormous gorgeous heirloom tomatoes, slice em up all nice and pretty. We also try not to eat all of them right then and there because…
…cheese is on the horizon. A double-whammy of cheese and you so saw that coming. ?
Cover up those slices with a thick layer of shredded mozzarella and plenty ‘o Parmesan. A heavy sprinkle of salt and pepper…
And I kid you not, y’all. 3-4 minutes of broiling later…and you get this.
Game-changer tip: Don’t skimp on the fresh basil on top of these cheesy beauties. Fresh basil and heirloom tomatoes! Yum!
Also try your hardest not to eat all those pretty tomato slices straight off the sheet.
It happens to the best of us. It possibly happened to me.
This is for real the ONLY way you’re gonna want to eat the last of those summer ‘maters, guys! You will be just as obsessed as I clearly am.
And that’s ok too. Summer is just too short to not eat ALL of these. ??

Baked Parmesan Basil Heirloom Tomatoes
Ingredients
- 3 large heirloom tomatoes sliced 1/4-in thick
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons minced fresh basil
Instructions
- Place tomatoes in a single layer on a greased baking sheet and brush with olive oil. Sprinkle cheeses evenly over tomatoes and season with salt and pepper.
- Broil tomatoes on high heat 3-4 minutes or until tomatoes are blistered slightly and cheese is bubbly and golden. Remove tomatoes from oven and sprinkle with fresh basil. Serve immediately while warm. Enjoy!
