BBQ Bacon Cheeseburger Meatballs

These BBQ Bacon Cheeseburger meatballs make a great meal, game-time snack, or perfect even just for snacking. Both kids and adults love them!

They are made using Goldfish crackers for an awesome cheddar flavor, and are loaded with bacon. Baked to perfection. Then drenched in BBQ sauce for full flavor and so much fun! They are sure to bring a smile to your face.

When I was a freshman in college I had a dining plan. I had this little card, and it was loaded each day with fake money. I could eat at the dorm cafeteria 3 times that day. Or I could spend “$10” at any place on campus. This included a little market, and several chain type food places like Subway and Taco Bell. At the end of the week any leftover money disappeared.

At the time I loved it. But I frequently found myself with a little money at the end of the week. Right across from my dorm was a burger place that was part of the “on campus” eatery options, and they had these insanely good (AKA full of delicious fats) burgers. Not just any burger, Barbeque Bacon Cheeseburgers. I pretty much ate one a day for my entire freshman year, and on weekends I splurged with a milkshake and extra large fries too!

I may have split a few pairs of too tight jeans in the process, but that is another story for another time.

With just one bite these awesome meatballs take me back to my college years, but in a much less pant-split inducing way!

I really enjoyed them and so did the hubs. But one of the things I really loved about these meatballs is how much my kids enjoyed them. They love burgers, but having all the fun burger flavor in an easier to eat meatball form was a real hit at our house! After a few too many “resolution” recipes (if ya know what I mean) my kids have been revolting and it was nice to have something with ZERO complaints.

Plus, I loved that I could buy the whole big carton of Goldfish crackers (30 ounces) on Rollback at Walmart. That certainly made me smile.

BBQ Bacon Cheeseburger Meatballs

Ingredients

  • 11/2 cups Goldfish crackers
  • 1 lb ground beef
  • 1/2 lb bacon
  • 1/3 cup cheddar cheese shredded
  • 1/3 cup feta cheese optional
  • Salt and pepper to taste
  • 1 cup BBQ sauce of choice

Instructions

  • Preheat oven to 400 degrees F
  • In a food processor grind up crackers, remove and set aside
  • Put hamburger, and bacon into food processor, and process for about a minute, then add in cheeses, and Goldfish crackers, and pulse to combine
  • Form into 1 inch balls
  • Bake on parchment lined pan for 15-18 minutes
  • Remove from oven and toss in BBQ sauce
  • Serve as is, or skewered with garnishments
