You guys, doesn’t this drink just make you think of spring? Mint and blackberries! Yum.

We have had some pretty beautiful weather lately! How about you guys? I know it has me wishing for summer, taking the cover off the BBQ, planning summer vacations, and even playing at the park. But I need to remember spring is an amazing time of year too, and I shouldn’t be in such a hurry to get to summer that I skip spring.

I am trying really hard to embrace a new attitude. I feel like lately I keep waiting for things to slow down. I am constantly saying stuff like, “Once our move is over…” Or, “Once my treatment is done…” Or “Eventually we will…” and I am kind of tired of it. I feel like I keep putting off things I really want to do, and things that will make our family happy because the timing isn’t right. Or I keep waiting for the next step to happen before I take action. But I am going to start enjoying today, and not wait for tomorrow to have a good attitude. And I am going to start with food. Because everything I do comes back to food eventually, right?

One thing I often find myself doing is putting off making something I really want to eat or try until a special occasion. Often when we go out to dinner for a special occasion I order a fun fancy drink. I really enjoy it. But I never think to make it at home just because. It is like I have to wait for a party to make something I really enjoy. Not any more!

Did you guys know there is a new Canada Dry Blackberry Ginger Ale® ? Doesn’t it sound so good? When I heard about it, I went to Walmart to find it, and while my Walmart did not have it yet, I decided not to let that stop me. So I bought Blackberries and the original green bottle Canada Dry Ginger Ale®, along with some mint and whipped this drink up!

This fizzy drink was so easy to make, and tastes so good. I couldn’t stop sipping on it.  It made me happy. While it is easy enough to make for any occasion, it is pretty and fancy enough to make for special occasions too. Like let’s say you want to get together and have a little luncheon with friends. Who says a spring party has to be a lot of work?

With this drink, some fresh cut flowers from your garden to act as a centerpiece, a few colorful, mismatched dishes set on a cloth covered table, and a fresh light meal, like these turkey lettuce wraps, you have an awesome luncheon party in 15-20 minutes!

You can even add some really fun finishing touches like making ice cubes that have fresh blackberries and mint leaves frozen in them. Aren’t this awesome? They were perfect for keeping this Blackberry Mint Spritzer cold! I just put the blackberries and mint leaves in my silicone ice cube tray. It was easy peasy.

Do you know how to select a good clamshell of blackberries? When selecting blackberries look for deep, evenly colored berries with a nice sheen, and that are nice and plump!

Blackberry Mint Spritzer

Blackberries and Mint combine with the bubbly fun of Canada Dry Ginger Ale® to create this delicious fun spritzer that is alcohol free and family friendly!

Ingredients

  • 5-8 ounces of blackberries
  • 1/2 cup mint leaves
  • 1 L Canada Dry Ginger Ale® or Canada Dry Blackberry Ginger Ale®

Ice Cubes

  • Water
  • 9 mint leaves
  • 9 blackberries
  • a 9 slot silicone ice cube tray

Instructions

  • Prepare ice cubes by placing a blackberry and mint leaf in each slot of your silicone ice cube tray, top with water, and put in freezer
  • Put 2-3 berries in the bottom of each glass along with 2-3 mint leaves, using a muddling tool (pestle, or even just a spoon) give the mint and blackberries a little smashing to release flavors
  • Add 3-4 ice cubes per glass
  • Fill glass with Canada Dry Ginger Ale®
  • Garnish with more mint leaves and blackberries as desired.

When I originally made this recipe I just put the blackberries and mint in whole. So it was really pretty and looked like this:

But then I wanted more blackberry flavor. So I made a second set and muddled the mint and blackberries together put them in the cup, topped with the ice cubes, and poured the Canada Dry Ginger Ale over the top. And it was even better because it gave it that rich minty and blackberry flavor that made it so special.
