Hi guys! You all know I am like the WORST breakfast eater on the planet. I get up and get going, and then it is like 12:30 and I realize I have had nothing to eat all day. Sometimes I wish I was a coffee drinker just so I would think about my stomach in the mornings. But alas, I am not. Until Now!!!!
Despite my lack-of-breakfast-past I am turning over a new leaf, and THIS breakfast flatbread is why! Holy crap, it is like the best tasting thing I have EVER had for breakfast, and ridiculously easy to make too. You get a crunchy flatbread bottom, hearty, salty, flavorful breakfast meats, rich mushrooms, creamy cheese, and a decidedly perfect egg with a runny yolk to tie it all together! And you get all of that in just 15 minutes.
I knew this was going to be a real palette pleaser for me, so I decided to pre-cook some breakfast sausage and chop some veggies. Then I put them in a container in my fridge, and now I can make these for breakfast every. single. day. Without any hassle, and just dirtying one pan! Amazing.
I used ham, sausage, pepperjack cheese, and mushrooms because I love all of those things, but feel free to swap in your favorite breakfast meats, veggies, and cheese.
When I assembled this, I just put all the ingredients on, then sort of pushed them to the sides to make a little “nest” for my egg to rest on. Then I baked until the whites of the egg actually turned white. For me that was 10 minutes. Check for your oven, and once you know you can use that as your standard for cooking these.
One thing that was really fun was I could customize for each family member in just a matter of minutes, and bake them all together. So it was quick, eazy peazy, and absolutely delicious. I keep thinking how fun these breakfast flatbreads would be for a family holiday party. Just set up a bar of toppings, like bacon, ham, sausage, tomatoes, onions, mushrooms, various cheeses, etc. and let everyone assemble their own! My parents are vegetarian so the more I think on this idea the more I love it because they could make theirs meat free, while the rest of us add whatever we want.

Breakfast Flatbread
Ingredients
- 1 package Stonefire Tandoor baked mini Naan 4 piece to a package
- 1/2 cup cooked breakfast sausage
- 1/2 cup ham pieces
- 2 white mushrooms sliced
- 1/2 cup Pepperjack cheese
- 4 large eggs
- Salt and Pepper to taste
Top it (Optional)
- 1/4 cup spinach sliced into small pieces
- 1/4 cup tomatoes
Instructions
- Preheat oven to 400 degrees
- Lay mini naan out on an ungreased baking sheet
- Put meats, mushrooms, and cheese on top, then push to the sides to form a "nest"
- Crack egg into the center of the "nest"
- Season with salt and pepper
- Bake until the whites of the egg turn white, about 8-10 minutes (more or less depending on your oven, just watch it)
- Top with fresh veggies of choice. (optional)
- Enjoy!
