Summer is finally here, and while we aren’t spending it traveling exclusively like we had hoped, it is still an exciting summer. We bought a house, and are moving. So the vacation got put on hold in order to facilitate a move that wasn’t initially planned. But despite a few less vacations, we are still loving every moment of summer and one of the main reasons is the fresh produce. Don’t you just love the food in the summer?
The watermelon, tomatoes, squash, berries, etc. that are fresh, ripe, and in abundance mean I am a happy camper. But my most favorite fresh food in summer is corn! I love Sweet Corn, and love cooking it every which way, in a slow cooker, on the grill, steamed, etc. I got this recipe for cooking sweet corn from Fresh From Florida and the Florida Department of Agriculture. They promotes locally grown Florida produce and fresh seafood, and help make it easier to enjoy it with awesome recipes. I don’t know about you guys, but when the sun is shining, and the schedule is a little more laid back, there is nothing like a big plate of colorful, fresh ingredients to send my tastebuds on vacation.
If you haven’t noticed, I am obsessed with all the fresh flavors and foods available this season. I made this awesome Blueberry Fruit Salsa with Florida Fresh Blueberries, and ate it by the spoonful, then put it on some white fish that I had grilled. It was amazing. Well this sweet corn recipe goes right along with it. Fresh, flavorful, and perfect for summer eating. Imagine this bacon cheddar covered sweet corn served with a freshly grilled protein of choice and a cold drink! Yeah…I am drooling too.
Cheddar Bacon Florida Sweet Corn
Ingredients
- 4 ears fresh Florida corn
- 2 tbsp Sour cream
- 1 cup Cheddar cheese
- 1/2 cup Bacon
- 1 tbsp Chives
Instructions
- Shuck corn, clean off all the silky hairs
- Place shucked corn directly on a hot grill.
- Rotate and cook corn until charred and cooked, about 10 minutes.
- Remove from heat.
- Let cool for 5 minutes and spread sour cream on warm corn.
- Roll the corn in grated cheddar cheese and top with crumbled, cooked bacon and chives.
- Portions of toppings based on preference.

I really like sweet summer corn so I know this sounds crazy but, I don’t like corn ON THE COB. With that being said, can this recipe be adapted using corn off the cob?

Yes, for sure. I would just stir the ingredients in like a corn salad.
