A light and creamy avocado fettuccine pasta made with gluten free, non-gmo, dairy free noodles!
What do you guys usually eat for lunch? I have been finding myself skipping lunch way too often because I don’t want to cook for just me. When I have salads or something in the fridge and ready to go it is no problem. But when I don’t, it sometimes just feels like too much effort.
Not good.
So I have been experimenting with new recipes that only feed 1 or 2, as I am usually cooking for a crowd, I don’t have many that work for just me for lunch, and I am not a huge fan of leftovers. Anyway, I was on the House Foods website and saw their recipe for this creamy avocado fettuccine, and since I LOVE LOVE LOVE avocado, and I also love their Tofu Shirataki noodles, I knew it would be perfect for me!
And it totally was.
I started using my food processor for the first time in earnest less than a year ago, and now I feel like I use it for every recipe I post. But I just love it so much, and it makes life so easy. This recipe is no exception. You basically prepare the noodles according to package directions (follow instructions carefully, they have an “authentic” smell, but if you follow the directions they will taste awesome), and put your sauce ingredients in the food processor and process until smooth.
Then heat it up!
How awesome is that? Couldn’t be simpler, and gah…it is good. Lick the plate clean, have a second helping, wish you had cooked for the whole fam, and then been the only one eating it good! And it is pretty guilt free too. Gotta love an easy, healthy recipe full of good fats, protein, and flavor!

Creamy Avocado Fettuccine
Ingredients
- 2 pkg House Foods Tofu Shirataki Fettuccine shape
- 1 avocado pitted
- 2 Tbsp light cream cheese
- a few basil leaves
- dash garlic powder
- salt and pepper to taste
- 1 tsp olive oil
- juice from 1/2 lemon
- parmesan cheese optional topping
Instructions
- Prepare Tofu Shirataki according to package instructions. Cut into manageable size.
- In the bowl of a food processor add avocado, cream cheese, basil leaves, lemon juice and olive oil. Puree until smooth.
- In a pan over medium heat, combine avocado mixture and noodles. Heat for 1 minute. Add salt, pepper and garlic powder. Top with parmesan cheese and serve.

Yes! I would eat this all day long! Thank you! Where can you buy those noodles… are they available at only specific grocers or their website? I’ve never seen them before.

Marsha, great question. They are called Tofu Shirataki/Shirataki noodles. I know Kroger carries this brand, but you can check your local grocery store and look in the same place they carry things like wonton wrappers, ginger, and tofu, and you should be able to find them, though they can be easy to overlook. I have seen tofu shirataki at Walmart even. If you run into trouble let me know and I can ask my brand contact which stores in your area might carry them. Thanks

Thanks for sharing this! I had a bad experience with Tofu Noodles, but this makes me want to give it a second try. I do stock cooking (makes it much easier to cook for just one person); do you know if you can freeze this?

I believe you can freeze the noodles, and you can definitely freeze the sauce. I would probably freeze separately, and combine before serving.
