Crock Pot Funeral Potatoes: Creamy, cheesy, slow cooked potatoes, perfect for feeding a family or a crowd.
What a dreary name! Right? Funeral Potatoes. I don’t call them this because they are “To Die For,” even though they are. But because that is what we call them where I live. Why? Because they are a staple in comfort food, and something neighbors and friends, and church members typically make and serve the grieving friends and family of a deceased individual. I think other people call it Cheesy Potato Casserole!
Whatever you call it, I call it yummy! And oh so easy. Don’t you just love easy slow cooker recipes? Whether it is a main dish, a dessert, or a side dish, I love being able to simply mix and dump, and let the slow cooker do the job.
These potatoes are no exception to that simple dump and stir method. And when you use Simply Potatoes hashbrowns it gets even easier. Simply Potatoes are fresh, never frozen, and so easy to prepare as you don’t have to peel or shred, just open the bag and dump them in. One thing to note if you are making this recipe is that the Simply Potatoes are found in the refrigerated dairy section. Usually by the eggs. Anyway, I really love these potatoes, and use them in a lot of recipes. They are made with real ingredients, and make my life easier. A big win!
And these funeral potatoes are also a big win. They are creamy, easy to make, and delicious. They have a crunchy topping, and cook up quick. They are great for taking a meal over to a friend, or serving your family for dinner. You could even add in some honey baked ham to make it a full meal instead of a side dish.
You just have to mix up the ingredients, put them in a sprayed crock pot.
Then let them cook for 4 hours on high.
Then top them with french fried onions and corn flakes and cook another 30 minutes.
At this point, you can eat them as is, or you can do a quick broil in the oven to crisp up the top a little more. Another quick and easy trick is to put a paper towel under the slow cooker lid, which will catch the condensation and keep the top crispier.
How easy is that?
Crock Pot Funeral Potatoes
Ingredients
Potatoe Mixture
- 1 package Simply Potatoes hashbrowns
- 1 10.5 ounce can of Cream of Chicken Soup
- 3/4 cup sour cream
- 3/4 cup shredded cheese
- 1 small onion chopped small
- Salt and pepper to taste
- Green onion Garnish
Topper
- 3/4 cup French Fried Onions
- 3/4 cup Corn Flakes
Instructions
- Mix together Simply Potatoes hashbrowns, cream of chicken soup, sour cream, cheese, chopped onions, and salt and pepper.
- Spray a 6-8 quart Crockpot with cooking spray
- Dump potatoes into crock pot, and using a spatula, smooth the potatoes out.
- Put lid on, and cook on high heat for 4 hours.
- Mix together French fried onions and Corn Flakes, and sprinkle them over the top. Cook 20-30 more minutes
- Broil for 2-3 minutes in an oven to crisp up top (optional)
- Garnish with chopped green onion.

Not a fan of pre chopped or pre shredded foods. How much shredded potato is needed for this recipe?

Every slow cooker is different, but it should be pretty close. Check it at the time, and allow yourself an extra hour just in case.

Most recipes call for 30oz bags…the kind I buy are 24oz and I plan on doubling the recipe so I’ll just use 2 bags.
