crockpot chipolte pork tacos

This recipe has a lot of flavor, and a lot of dimension. This delightful pork dish is slow cooked, allowing the meat to simmer in the garlic, onions, and peppers for a deep, rich, flavor perfect for the comfort food that tacos are.

Crockpots can be real dinner savers. I typically do not love crockpot meals, but I know my readers do. I have been developing more crockpot recipes, and this is one that I feel is good enough to share. In the spirit of honesty, my husband did not like this recipe. He doesn’t enjoy pork, and while he ate it, he said, “It is not your best.” I disagree. I thought it was great. I was glad I made a big pot full because it meant I had leftovers!

For these tacos I used a homemade restaurant style blender salsa, and Mark’s homemade tortillas, mostly because I wanted a truly decadent meal. I had been smelling the meat simmering all day, and knew I wanted an above average tortilla, and really good salsa to enjoy with this taco. But, of course, feel free to keep it easy using whatever you have. The meat has a lot of flavor and will still taste great even if it is in a store bought tortilla shell. I promise.
