easy, falvorful, moist crockpot pot roast

Don’t you just love a good crockpot roast? It is so nice to throw a few ingredients in a crockpot, and come back a few hours later to find something moist, flavorful, and tasty!

This is a simple recipe, and it tastes amazing. It is my kid’s favorite roast, and I always have to throw in extra carrots because they love them, and eat them up quickly. Spend 5 minutes in the morning and you get a moist flavorful dinner.

Ingredients

  • 5 lb round beef roast
  • 1 Tbs olive oil
  • 1 cup Italian dressing Zesty is best
  • 1 packet onion soup mix
  • 1 can cream of mushroom soup
  • 1- 2 lbs baby carrots

Instructions

  • Sear beef roast in a hot saute pan with hot olive oil
  • Put in crock pot, and cover with zesty Italian dressing and onion soup mix
  • Put carrots in and cover with cream of mushroom soup
  • Cook for 6-8 hours on low

This is a great Sunday meal, or a perfect hearty dinner on a night when you want to have a great dinner but don’t want to do any work.

My family goes to church, and we enjoy it, as much as you can enjoy wrestling kids and keeping them quiet for an hour of worship before sending them off to their classes.

When we get home from church we are almost always hungry. 3 hours of church is bound to stir up and appetite. But the truth is I never want to come home and cook. Never. And I enjoy cooking. But the fact is, I usually just want to eat and take a nap. I love a nice lazy Sunday nap. But it is so much better on a full stomach.

If you are anything like me, make this roast. It works great, and I will let you in on a little secret, while searing the outside of the roast helps, it isn’t totally necessary with this recipe. There has been a time or two (Ok, maybe three) that I just threw everything in and started the crockpot, and guess what? It still turns out moist and flavorful each time!

I love a good round roast. It is a great source of protein. And protein is something we should all be getting. Did you know that protein takes 25% more energy to digest? Because protein takes longer to break down than fat and carbohydrate, the body uses more energy to digest protein and this helps you burn more calories. Talk about win if you are looking to lose weight!

Which leads us to today’s 28-day challenge.

Day 22  Mini-Challenge: Eat extra protein today!

Protein can be found in things other than red meat. You can eat nuts, flax, chia, or even green vegetables like broccoli or spinach. I like a good Greek yogurt or extra protein cream cheese too. That is a nice way to get extra protein at breakfast without eating eggs. If you want to get lean and give your body the fuel you need to get through a day with energy, then get some extra protein!
