My family has been moving, and that has lead to a lot of eating out because sometimes it seems easier or faster to just grab a meal on the go then make something and clean it up at home. Especially with a half packed kitchen, and boxes to navigate around. Despite a lot of meals from drive-thrus, we have been eating breakfast at home. Being the totally awesome mom that I am, I stocked up on cereal and told my kids that was breakfast for the next month. The problem was I forgot to stock up on milk to go with the cereal. And so nothing for breakfast.
I knew I needed to come up with something, but had only a few minutes before I had someone showing up at the house to help with the move, so with faith and a prayer I plugged in my griddle (literally the only thing I hadn’t packed from my kitchen yet because it was too big), and opened my freezer and fridge. I spotted some Jones Dairy Farm Fully Cooked Sausage, and knew I had to use it. It tastes awesome, and offers total ease and convenience with being fully cooked. When I opened my fridge I had corn tortillas, and a few eggs, some cheese, and random veggies.
And so like every other time I have just a handful of random ingredients, a taco was born, and now it is a regular addition to our breakfast menu. This easy sausage breakfast taco is the simplest because you cook it all on one griddle, from the eggs to the sausage to the heating of the tortillas. It is only a few simple ingredients. And because the sausage is fully cooked, the only wait time is for the eggs to cook, which is the perfect time to heat the sausage in the microwave or on the griddle as well!

You don’t really need a recipe for this one because it is pretty simple, but I will be sharing one anyway. Sometimes simple really is better. I know in the morning, I always appreciate something that does not take a whole lot of thought process or work. And these tacos are awesome. One of the reasons I love using the breakfast sausages instead of a crumble is you get sausage in every bite. Same with the eggs and avocado. Rather than chunking them up and taking my chances, I layer them, and get a great bite every time!

Easy (5 Min) Breakfast Tacos
Ingredients
- 10 corn tortillas
- 1 package Jones Dairy Farm Fully Cooked Mild Pork Sausage
- 3 Large eggs
- 1/2 cup shredded cheddar cheese
- 1 ripe avocado
- 1 tsp all-purpose seasoner or salt and pepper to season eggs
- Salsa Sour Cream, Fresh Cilantro, Lime Wedges for garnish
Instructions
- On a griddle heated to 350 degrees crack eggs, and break yolk, season eggs with all-purpose seasoning, and cook for about 1 minute per side.
- While eggs are cooking, heat sausage according to package directions
- Remove eggs, turn griddle off, and warm tortillas on still hot griddle
- Slice eggs into 10 strips, and layer each tortilla with a piece of egg, a piece of Jones Dairy Farm fully cooked sausage, a slice of avocado, a sprinkle of cheese, and garnish of your preference.
