This turtle poke cake has a little something extra too it…toffee bits. I needed something extra. I just did. Why? School is out! I am both thrilled and terrified! Hahaha I think most parents understand those feelings. So happy to be off the schedule, and have a little freedom, some quality time with kids that doesn’t involve harping on them about homework. But then I am also terrified. Terrified of having to keep kids entertained, fed, and getting along all day every day while they are home.
Regardless, we are celebrating the last day of school and the kick off of summer by letting the kids stay up late for a movie night, with plenty of fun snacks to keep everyone satisfied, and this chocolaty, caramel filled decadent cake. Because what is a party without cake?

But enough about that, let’s talk about this cake. It was the perfect way to celebrate school being out. It was tasty and yummy, but was easy to throw together, and did not require much exertion from me.
I grabbed a boxed chocolate cake mix while I was shopping at Walmart, and a big jar of salted caramel sauce. Then I made stabilized whipped cream frosting. It is so much easier to make then you would think. I used my blender and it took mere seconds. Then I just shaved some chocolate, drizzled on some extra caramel, and chopped up pecans and sprinkled on toffee! Easy as pie. But it is cake. Amazing, decadent, chocolate and caramel filled turtle poke cake!
So whether you are celebrating school being out, or a big milestone being reached, a birthday, or just everyday fun, give this turtle poke cake a try! You won’t be disappointed.

Easy Turtle Poke Cake
Ingredients
- 1 box of chocolate cake mix prepared according to package directions
- 1 8 ounce jar salted caramel sauce
- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 Tbs gelatin
- 1/2 cup chopped up chocolate
- 1/2 cup pecan halves
- 2 Tbs additional caramel sauce
- 1/3 cup toffee bits
Instructions
- Bake cake according to package directions, and allow to cool fully.
- Use a wooden spoon or chop sticks to poke several holes in the top of the cake.
- Pour the salted caramel sauce over the top of the cake.
- In a blender (or with a hand mixer), combine heavy whipping cream, powdered sugar, and gelatin. Mix until whipping cream has thickened (30-40 seconds in a high powered blender).
- Drizzle caramel over the top of the cake. Evenly sprinkle pecans, chocolate chunks, and toffee bits over the cake.
- Chill and serve!
