Garlic Rosemary Vegetable Grill Packet

Spring is grilling season, time to dust off those grills and fill the propane tanks! Today I want to show you some of my favorite up-scale grilling recipes: A spring vegetable foil packet, the perfect compliment to your favorite kabobs, and a kielbasa and sweet potato grill packet (recipe coming soon)!

I seriously love grilling all summer long. It is totally worth it to store my grill all winter to be able to eat freshly grilled foods for 3 months or so. And I also love that I can plan ahead, use easy to prepare meals, and have them taste awesome.

How many of you keep frozen fries in your freezer? I know a lot of people think those fries (sweet potato and otherwise) are only for accompanying burgers and dogs, and that they are not very good for you. But I love using them in my vegetable grill packets. Especially the new Alexia Rosemary Fries. They go amazing with fresh asparagus, zucchini, and spring carrots. And because Alexia product use all-natural ingredients I don’t have to worry about them being unhealthy!

While my favorite combo is the rosemary fries and spring vegetable, you can use any of the flavors. I also make a kielbasa and sweet potato packet that has BBQ! I will share it tomorrow, as it also use these great Alexia frozen products. These packets can be a complete meal, or an awesome side. And they make dinner time a snap! That is something I can feel great about.

Honestly, I have been trying to simplify things around here, and offer healthier options to my family. I love that Alexia products use all-natural ingredients so that I can have convenience of something that is ready to go in my freezer, but also good for the whole family! And it is also super nice that I can just pick them up at Walmart while shopping for things like diapers and wipes!

I have to laugh because we recently moved, and of course, the garage is still full of crap I haven’t had time to put away, and boxes that need to be unpacked, but the grill is up an going. Kind of reflects my priorities, dontcha think? Haha Foood!!! Food!!! Food!!

Anyway, trust me, this is a good one. It takes only a couple minutes to throw together, then you just let it cook for about 25-30 on a grill set to low.

Garlic Rosemary Vegetable Grill Packet

 A spring vegetable foil packet, the perfect compliment to your favorite kabobs.

Ingredients

  • 1/2 red onion
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1/2 cup carrot slices
  • 7-10 asparagus stalks
  • 2 cups Alexia Rosemary Fries
  • 1 Tbs olive oil
  • 1 tsp minced garlic
  • 1 tsp Garlic Rosemary Seasoning Mix

Instructions

  • Put everything in a bowl and toss to combine and coat with olive oil
  • Dump onto a piece of heavy duty foil, and wrap so that it is in a pouch
  • Put on preheated grill, then turn grill down to low, and let cook approximately 25 minutes. Every grill heats differently, so check about half way through to insure it is not burning, stir if needed, and keep an eye on it.
  • Serve immediately.
